Chicken and Dumplings Casserole

Preheat oven to 400. Place butter in a 9×13 pan and put in oven while it is preheating, to melt and brown
- 3-4 cups of cooked chicken (I used a rotisserie chicken)
- 2 cups chicken broth
- 1/4 cup unsalted browned butter
- 1 cup flour
- 1 1/4 tsp baking powder
- 1/4 tsp salt
- 1 cup skim milk
- 1 can Campbell’s Cream of Chicken soup (I’ve also made with Cream of Mushroom)
Buttermilk Carrot Cake

Preheat oven to 350 degrees F
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon salt
- 1 pound carrots, shredded (about 2 cups packed)
- 1 (8-ounce) can crushed pineapple, drained
- 2 cups packed light brown sugar
- 1 cup finely chopped walnuts
- 4 eggs
- 1/2 cup buttermilk
- 1/2 cup vegetable oil
- Buttery Cream Cheese Frosting (see Note)
Turnip Green Dip

Cook the turnip greens according to package directions, omitting salt
- 1 16-ounce package frozen chopped turnip greens
- 3 slices thick cut bacon, cut crosswise
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 1/4 cup, plus 2 T dry white wine
- 12 oz. low-fat cream cheese (Neufchatel), cut into chunks
- 4 oz. low-fat sour cream
- 1/2 tsp. red pepper flakes
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 3/4 cup grated Parmesan cheese
- Assorted crackers and tortilla chips
Pineapple Citrus Cream Squares

In a large bowl, dissolve gelatin in boiling water
- 2 (4-serving-size) packages lemon-flavored gelatin
- 2 cups boiling water
- 1 cup cold water
- 1 (20-ounce) can crushed pineapple, drained, with 1 cup juice reserved
- 2 teaspoons grated orange peel
- 1 1/2 cups grated carrot
- 1 (8-ounce) package cream cheese, softened
- 1 cup sugar
- 1 (8-ounce) container frozen whipped topping, thawed
Amish Breakfast Casserole

Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain
- 1 pound sliced bacon, diced
- 1 medium sweet onion, chopped
- 6 large eggs, lightly beaten
- 4 cups frozen shredded hash brown potatoes, thawed
- 2 cups shredded cheddar cheese
- 1-1/2 cups 4% cottage cheese
- 1-1/4 cups shredded Swiss cheese
Charlie’s Layered Mexican Casserole

Saute’ ground beef and onion in frying pan until brown and onions are translucent
- 10 to 12 – 5″ flour or corn tortillas (or large tortillas, quartered or torn into large pieces)
- 1 jar (24 ounces) favorite bottled salsa; I use Safeway Select Garlic Lover’s Salsa
- 1 pound ground hamburger, cooked and crumbled
- 10 grape or cherry tomatoes, sliced in half
- 1 small yellow onion, peeled and chopped
- 1 package (16 ounces) frozen corn or 1 can (15 1/4 ounces) corn, drained
- 1 can (6 ounces) chopped green chilies
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1/2 cup black olives, sliced
- 9 slices of American cheese
- 2 cups of shredded cheddar cheese
- 1/2 bunch cilantro, picked from stems (for garnish)
- Sour cream (garnish)
- Additional salsa (garnish)
- Jalapeno (optional – garnish)
Shanghai Pork Chops

In a medium bowl, combine all ingredients except pork chops; mix well
- 1/2 cup light brown sugar
- 1/2 cup soy sauce
- 1/4 cup ketchup
- 2 or 3 scallions (green onions), thinly sliced
- 1 teaspoon fresh grated gingerroot
- 1 teaspoon fresh chopped garlic
- 4 (4- to 6-ounce) pork chops
Sun-Dried Tomato Turkey Burgers

Cut onion in half. Finely chop one half and thinly slice the remaining half
- 1 large red onion
- 1 cup (4 ounces) crumbled feta cheese, divided
- 2/3 cup chopped oil-packed sun-dried tomatoes
- 1/4 teaspoon salt

- 1/4 cup reduced-sodium soy sauce
- 2 tablespoons ketchup
- 2 tablespoons Worcestershire sauce
- 2 teaspoons sugar
- 1/4 teaspoon crushed red pepper flakes
- 3 teaspoons canola oil, divided
- 1 pound boneless pork loin chops, cut into 1/2-inch strips
- 1 cup fresh broccoli florets
- 4 cups coleslaw mix
- 1 can (8 ounces) bamboo shoots, drained
- 4 garlic cloves, minced
- 2 packages (3 ounces each) ramen noodles
Country-Style Pork Roast

Spray the inside of a slow cooker with non-stick cooking spray
- 1 (2-3 lb) pork roast
- 1/2 cup all-purpose flour
- 1 teaspoon seasoned salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground mustard
- 1/2 teaspoon dried oregano
- 2 tablespoons olive oil
- 2 cans (14.5 oz each) chicken broth
- 1 lb baby carrots (or sliced carrots- whatever you prefer)
- 1/4 cup cornstarch
- 1/4 cup cold water
