Heat oven to 375 degrees F (190 degrees C)
- 2 cups (175 grams) old fashioned rolled oats
- 1/3 cup (70 grams) packed light brown sugar
- 1 teaspoon baking powder
- 1 tablespoon grated orange zest
- 1 teaspoon Chinese five spice (you can substitute cinnamon)
- 1/2 teaspoon salt
- 1/2 cup (55 grams) walnuts, chopped
- 1 cup (125 grams) sliced strawberries
- 1/3 cup (58 grams) semi-sweet chocolate chips
- 2 cups (473 ml) reduced-fat (2%) milk
- 1 large egg
- 3 tablespoons butter, melted
- 2 teaspoons vanilla extract
- 1 ripe banana, peeled, 1/2-inch slices
Squash and Pork Casserole

Preheat the oven to 375 degrees F
- 3 tablespoons extra-virgin olive oil
- 6 ounces ground pork
- Kosher salt and freshly ground pepper
- 1 clove garlic, chopped
- 4 ounces cremini mushrooms, stemmed and chopped
- 3 scallions, chopped
- 1/2 cup panko breadcrumbs (preferably whole-wheat)
- 1 14 .5-ounce can no-salt-added diced tomatoes

Daisy Brand Chicken Nachos

Heat the oven to 400 degrees
- 6 cups blue corn chips
- 3 cups shredded cooked chicken
- 1 cup Daisy Brand Sour Cream
- 3/4 cup salsa
- 1/4 cup chopped green onions
- 1 tablespoon fajita mix
- 1 tablespoon freshly squeezed lime juice
- 3/4 cup black beans, rinsed and drained
- 1/4 cup sliced banana peppers
- 1/2 cup sliced black and green olives
- 1 cup shredded Mexican cheese blend
- 1 avocado, sliced

- 1 cup (2 sticks) butter
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 cup shelled almonds
- 1 cup flaked coconut

Deluxe Chocolate Marshmallow Bars

In a small bowl, cream butter and sugar until light and fluffy
- TOPPING:
- 3/4 cup butter, softened
- 1-1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1-1/3 cups all-purpose flour
- 3 tablespoons baking cocoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped nuts, optional
- 4 cups miniature marshmallows
- 1-1/3 cups semisweet chocolate chips
- 1 cup peanut butter
- 3 tablespoons butter
- 2 cups Rice Krispies
Grilled BBQ Chicken Potato Skins

Preheat the oven to 350 degrees F and line a baking sheet with tin foil
- 8 medium potatoes
- 1-2 chicken breasts, cooked, chopped (or about 1 1/2 - 2 cups cooked, diced chicken)
- 2 tbsp finely chopped red onion
- 1/2 cup finely chopped pineapple
- 1/2 cup barbecue sauce (see notes above for my favorite!)
- 1 cup + 1/2 cup shredded cheddar cheese
- Green onion or parsley for garnish, optional

Place everything in a large pot, bring to a boil, reduce the heat to low and simmer for 2 hours
- 3 pound pork butt (cut into 2 inch cubes)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1 cup of orange juice
- 3 cups of water
Slow Cooker Sweet-and-Sour Pork

In a 3- or 4-qt. slow cooker, mix the first 10 ingredients
- 1/2 cup sugar
- 1/2 cup packed brown sugar
- 1/2 cup chicken broth
- 1/3 cup white vinegar
- 3 tablespoons lemon juice
- 3 tablespoons reduced-sodium soy sauce
- 3 tablespoons tomato paste
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground ginger
- 1/4 teaspoon pepper
- 1-1/2 1-inch boneless pork loin chops, cut into 1-inch cubes
- 1 1-inch onion, cut into 1-inch pieces
- 1 1-inch green pepper, cut into 1-inch pieces
- 1 can (8 ounces) pineapple chunks, drained
- 3 tablespoons cornstarch
- 1/3 cup chicken broth
- Hot cooked rice
