Pina Colada Trifle

In a medium bowl, combine milk and pudding mix
- 2 cups milk
- 1 (4-serving size) package vanilla instant pudding mix
- 1 (8-ounce) container frozen whipped topping, thawed
- 1 (9-inch) round angel food cake, cut into 1-inch cubes
- 1 (20-ounce) can pineapple tidbits, drained
- 1 cup toasted coconut
- 8 maraschino cherries

- 1-1/2 pounds boneless pork loin chops, cut into 2-inch pieces
- 1/4 teaspoon pepper
- 1 medium onion, halved and sliced
- 1/3 cup creamy peanut butter
- 1/4 cup reduced-sodium soy sauce
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon hot pepper sauce
- 1 can (14-1/2 ounces) reduced-sodium chicken broth
- 3 tablespoons cornstarch
- 3 tablespoons water
- 9 ounces uncooked thick rice noodles
- Minced fresh cilantro and chopped peanuts, optional
Creamy Potato Soup

Combine diced potatoes, carrots, celery and onions with chicken broth in a large stockpot
- 6 cups peeled and diced Russet potatos (about 5 medium potatos)
- 2 large carrots, diced
- 2 celery stalks, diced
- 1 medium yellow onion, finely diced
- 2 (15 oz) cans chicken broth (I use low-sodium)
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 2 1/2 cups milk
- 3/4 tsp salt
- Pepper to taste
- 1/8-1/4 tsp nutmeg to taste (optional)
- 1/2 cup sour cream
- 3/4 cup shredded ham
- 3/4 cup grated cheddar cheese
- 3 green onions, diced

- 1/2 cup light brown sugar

- 3/4 teaspoon salt

- 1/2 lemon, juiced
- 1/3 cup white sugar, or more to taste

Copycat Cracker Barrel Ham and Egg Casserole

Preheat oven to 350 degrees
- 1/3 cup lean cooked diced ham†(country cured ham if available)
- 1 slice sourdough bread†(remove crust and cut to fit bottom of casserole dish)
- 4 to 5 eggs, beaten (you want one cup of eggs)
- 1/4 cup evaporated milk
- 1/4 teaspoons salt
- 1/4 teaspoons ground black pepper
- 1/2 cup shredded mild cheddar cheese
Copycat Texas Roadhouse Butter

Mix all of the ingredients by hand, or in a mixer or food processor, until smooth and well combined
- 1/2 cup butter at room temperature
- 1/4 cup powdered sugar
- 1 tablespoon honey

- 1 to 4 chuck roast (3 to 4 pounds)
- 3 bay leaves
- 3 cups water
- 2 cups uncooked jasmine rice, rinsed and drained
- 3 tablespoons butter
- 1-1/2 teaspoons salt
- 1/2 cup minced fresh cilantro
- 2 tablespoons lime juice
Slowcooker Chicken Goulash

In a medium sized skillet heat the olive over medium heat
- 2 lbs boneless, skinless chicken breasts
- 2 Tablespoons of olive oil
- 1 large yellow onion, sliced
- 1 sweet red bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped finely
- 3 large cloves of garlic
- 1 Tablespoon of paprika
- (1) 28 ounce can of crushed tomatoes (diced or stewed would work too)
- 1/4 cup of red wine vinegar
- 1 Tablespoon of brown sugar (light or dark should be fine, whatever you have on hand)
- 1 teaspoon of salt
- 1 teaspoon of ground black pepper
