Baked Beans & Coffee BBQ Sauce With Thick Steaks

- For the Baked Beans:
- 12 oz Dried Pinto Beans (picked over and soaked for 8 hours)
- 1 tablespoon Olive Oil
- 8 oz Bacon (cut into lardons)
- 1 medium Spanish Onion (diced)
- 1 medium Carrot (diced)
- 4 cloves Garlic (minced)
- 1 cup Bourbon
- 1/4 cup Honey
- 3 tablespoons Molasses
- 3 tablespoons Light Brown Sugar
- 2 cups Chicken Stock
- 1 cup Coffee Barbecue Sauce
- Kosher Salt
- Freshly Ground Pepper
- 2 tablespoons Fresh Oregano (chopped)
- For the Coffee Barbecue Sauce:
- 1 Small Yellow Onion (minced)
- 1 tablespoon Olive Oil
- Kosher Salt
- 1 1/2 tablespoons Coriander Seeds (toasted)
- 1/2 cup Packed Brown Sugar
- 1/2 cup Sherry Vinegar
- 1 cup Strong Coffee
- 1 cup Ketchup
- 1/2 cup Tomato Juice
- 1/2 tablespoon Chipotle Powder
Bacon Wrapped Dates Stuffed with Blue Cheese

- 1 pound sliced bacon, cut in half
- 1 pound pitted dates

- 2 Lb Littleneck Clams (washed)
- 6 slices Bacon (minced)
- 2 Shallots
- 2 sprigs Thyme
- 1/2 Red Fresno Chile (minced)
- 4 tablespoons Butter
- Salt and Pepper
- 1/2 Bottle Beer
- 1/2 cup Water
- Juice of 1 Lemon
- 1 cup Breadcrumbs
- 1 clove Garlic (minced)
- 2 tablespoons Parsley (finely chopped)
Fried Potatoes

- 2 Large Idaho Potatoes (washed and scrubbed) skin intact
- 2 Large Sweet Potatoes (washed and scrubbed) skin intact
- 4 sprigs rosemary
- 4 sprigs sage
- 4 sprigs parsley
- 1 head of garlic skins on
- Salt&Pepper
- Lard or oil (for frying)
- Parmesan (freshly grated) for garnish

Yia Yia's Sunday Sauce

This tasty tomato sauce is perfect for recipes!
- 1/4 cup olive oil
- 1 large spanish onion (finely diced)
- 6 garlic cloves (sliced)
- 1 tablespoon kosher salt (or more to taste)
- 2 28-oz cans San Marzano tomatoes (with their juice)
- 1 cup dry white wine
- 2 pounds meaty beef bones
- 1 bay leaf
- 1 tablespoon fresh oregano leaves
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon crushed red pepper flakes (optional)
Sweet, Sticky and Spicy Chicken

"This chicken dish uses skinless boneless chicken breasts and tastes delicious
- 1 tablespoon brown sugar CAN DOUBLE THIS
- 2 tablespoons honey
- 1/4 cup soy sauce--reduce
- 2 teaspoons chopped fresh ginger root---tube
- 2 teaspoons chopped garlic--tube
- 2 tablespoons hot sauce
- salt and pepper to taste
- 4 skinless, boneless chicken breast halves - cut into 1/2 inch strips
- 1 tablespoon vegetable oil
- 1 onion-chopped
- 1 bunch green onion--chopped(greens,too)

- Pulled Pork Butt with C-Town BBQ Sauce

- 1 Head Savoy Cabbage (shredded)

- 5 Scallions (thinly sliced)

- 1/2 cup Mayonnaise

- 1 (16 ounce) package fully cooked kielbasa sausage, cut into 1/2-inch pieces
- 1 (8 ounce) package elbow macaroni
- 1/3 cup butter
- 1 small onion, chopped
- 3 tablespoons all-purpose flour
- 2 cups milk
- 1 (10 ounce) package sharp Cheddar cheese, cubed
