- 1 (14 ounce) can light coconut milk
- 1/4 cup soy sauce, divided
- 1/2 teaspoon brown sugar
- 1 1/2 teaspoons curry powder
- 1 teaspoon minced fresh ginger
- 2 teaspoons chile paste
- 1 pound firm tofu, cut into 3/4 inch cubes
- 4 roma (plum) tomatoes, chopped
- 1 yellow bell pepper, thinly sliced
- 4 ounces fresh mushrooms, chopped
- 1/4 cup chopped fresh basil
- 4 cups chopped bok choy
- salt to taste

- 2 Tspn Extra Virgin Olive Oil(more as needed)
- 8 oz Bacon cut into 1-inch by 1/4-inch pieces
- 1 Shallot (thinly sliced)
- 6 oz Cremini Mushrooms (halved if large)
- 1/2 Cup Chicken Stock or Water
- 6 Tblspn Balsamic Vinegar (more to taste)
- 4 Eggs (large)
- Salt and Black Pepper (to taste)
- 8 oz Fresh Spinach Leaves stemmed (about 8 cups loosely packed)

- For the Dressing:
- 1 1/2 pound Carrots (cut into 2-inch chunks at a bias)
- 3 tablespoons Extra Virgin Olive Oil
- Kosher Salt and Freshly Ground Black Pepper
- 1 tablespoon Toasted Whole Cumin Seeds
- 1 teaspoon Honey
- 2 tablespoons Sherry Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 Orange (Zest and Juice)
- 1/4 cup Mint (leaves only)
- 1 tablespoon Sherry Vinegar
- 1 tablespoon Honey
- 1 Shallot (thinly sliced)
- 1/4 cup Slivered Almonds
- Kosher Salt
- To Serve:
- 1 cup Feta (crumbled)
- 1 teaspoon Orange Zest
- Olive oil

- 1 (8 ounce) package cream cheese

- 1 tablepsoon Sesame Seeds
- Salt (to taste)
- 1 Large egg white
- 2 tablespoons finely chopped cilantro
- 2 Scallions (finely chopped)
- 6 Slices firm white sandwich bread cut into 1 1/2-inch rounds (24 total)
- 6 cups Vegetable oil for frying
