- For the Frosting
- 16 oz Cream Cheese (room temperature)
- 1 stick Butter (room temperature)

Spicy Garlic Lime Chicken

Groundnut Stew

- GARNISH:
- 2 tablespoons olive oil (plus 1 tablespoon)
- 1 1/2 cups chopped onion
- 1 clove garlic (minced)
- 2 cups peeled and cubed sweet potatoes
- 1 1/2 cups cooked small red beans
- 3 cups vegetable stock or broth
- 1 cup chopped red pepper
- 1 1/2 teaspoons grated fresh ginger
- 2 teaspoons salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 1 (14.5 oz. can) diced tomatoes
- 1 green or poblano chile roasted peeled (seeded and diced small)
- 1/2 habanero seeded and chopped finely (optional!)
- 3 tablespoons creamy peanut butter
- 1 lime (cut into wedges)

Cannelloni al Forno

- 2 2 2 tablespoons butter
- 3/4 3/4 3/4 pound hot italian sausage casing removed
- 1/2 1/2 1/2 cup Parmigiano-Reggiano grated plus more for garnishing pasta
- 1 1 1 tablespoon flour
- 1 1 1 cup milk
- 1 1 1 Pinch nutmeg--way more than a pinch
- 1 1 1 Egg beaten
- 1 1 1 Recipe basic pasta dough
- 1 1 1 cup basic tomato sauce
- 1 1 1 cup besciamella
- salt and fresh pepper
- 2 2 1 to of bechamel he used on the top you need 2 T. butter, 2 T. flour, 1 cup milk, and salt and pepper cooked together to make what we commonly call white sauce.
- 4 4 2 4 T. butter, 4 T. flour, 2 cups milk, plus however much nutmeg you like. If you like it thinner, use more milk or tweak however you like, the most important part is equal parts fat and flour. Cook the butter and flour out until it's foamy.

- Directions
- 6 to 7 saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat, cook until the mixture turns a light, golden sandy color, about 6 to 7 minutes.

- 1 tablespoon brandy/flavoured brandy
- 1 teaspoon dried tarragon
- 1 (8 ounce) wedge Brie cheese, coating removed
- Serve with toasted baguette or triscuits
Cheesy Chicken Meatballs

"I have abandoned fatty ground beef in favor of healthier options such as ground chicken and turkey
- 1 pound ground chicken
- 2 eggs, lightly beaten
- 1/4 cup roasted garlic light cream cheese
- 1/4 cup grated Parmesan cheese/sub laughing cow garlic & herb or Allouette
- 1 tablespoon dry bread crumbs
- 1 teaspoon crushed red pepper flakes
- 1 tablespoon Italian seasoning/sub1/2 tbsp.
- 1 tablespoon garlic powder
- 1 1/2 tablespoons vegetable oil/sub olive oil
- 1 teaspoon salt/sub 1/2 tsp.
- 1 teaspoon ground black pepper
- EDIT: only use i egg and don't add extra oil.
- If the mixture is too moist add breadcrumbs.

- 4 oz red wine
- 2 oz olive oil
- 2 tablespoons chile flakes
- Salt (to taste)
