Grilled Steak with Pablano Sauce and Sauteed Spinach

- Sauteed Spinach:
- 2 Lb steak
- 5-6 pablanos peppers
- 2 Tablespoon red onion (finely diced)
- 1-2 lemons (juice and zest)
- 1/2 Teaspoon honey
- 4 Tablespoon cilantro (roughly chopped)
- 4 Tablespoon olive oil
- Salt and pepper (to taste)
- 1 Teaspoon smoked paprika
- 1/2 Teaspoon cayenne pepper
- 1 Teaspoon ancho chili powder
- 1 Lb Fresh spinach
- 1 clove garlic (minced)
- 1 lemon (juice and zest)
- Touch of honey
- 1 Tablespoon olive oil
Mac N Cheese Bites

This dish brings together all your kid friendly favorites, mac and cheese and fried foods
- 1 pound Macaroni
- 2 tablespoon Butter
- 1 Onion diced
- 1 Garlic clove minced
- 1 teaspoon Paprika
- 1 teaspoon Dried Mustard
- Salt & Pepper to taste
- 2 tablespoon Flour
- 2 Cup Milk
- 1 pound White Cheddar
- 2 Cup Breadcrumbs
- 6 Eggs beaten
- Vegetable Oil for frying
Mashed Potatoes with Mushroom Sour Cream Gravy

Mashed potatoes are great on their own but they are even better with gravy
- For the mashed potatoes:
- 2 pound Russet Potatoes (peeled and cut into 2-inch cubes)
- Kosher Salt
- 6 tablespoon Unsalted Butter (cut into tablespoon-sized pieces)
- 1/2 cup Whole Milk
- Chopped Chives (for garnish)
- For the gravy:
- 1 cup Button Mushrooms (sliced)
- 2 tablespoon Unsalted Butter
- 1/2 Onion (chopped)
- 1 clove Garlic (chopped)
- 1 cup Beef Stock
- 1/3 cup Sour Cream
Italian Sausage Soup

"A hearty winter favorite
- 1 pound Italian sausage--Hot/Sweet--browned
- 1 clove garlic, minced
- 2 (14 ounce) cans beef broth--or 3 or 4--low sodium
- 1 (14.5 ounce) can Italian-style stewed tomatoes/crushed
- 1 cup sliced carrots/celery
- 1 (14.5 ounce) can great Northern beans, undrained
- 2 small zucchini, cubed
- 2 cups spinach - packed, rinsed and torn
- 1 onion--browned with meat
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt(optional)--basil & oregano
- 1/2-1 C cooked pasta/potatoes
- Grated cheese to garnish

Cream of Peanut Soup

"Peanut lovers will flip for this rich and creamy soup
- 2 tablespoons butter
- 1 stalk celery, chopped
- 1/2 medium onion, chopped
- 1 1/2 tablespoons Pillsbury BEST® All Purpose Flour
- 4 cups chicken broth
- 1 cup Jif® Creamy Peanut Butter--add more--to taste
- 1 cup milk
- Snipped chives
- Chopped peanuts for garnish (optional)
- 1/2 cup coconut milk
- cayenne 7 a bit more salt to taste.
- Will get stronger as it ages.
Toad in the Hole

- 2 pieces white sandwich bread
- 2 eggs
- 1 teaspoon oil
- 2 pieces bologna
- 2 tablespoons salad dressing (like Miracle Whip)
- Salt & pepper
- Hot sauce
- Salt and vinegar chips (optional)
Bean and Honey Burrito Casserole

"I have been trying for years to duplicate my favorite burrito from my favorite south Florida Mexican restaurant
- 1 1/2 cups cooked yellow rice
- 1 serving cooking spray
- 8 (8 inch) flour tortillas
- 1/4 cup prepared yellow mustard
- 1/4 cup sour cream
- 1/3 cup honey
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1 (15 ounce) can garbanzo beans, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn kernels
- 2 cups shredded cooked chicken
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded Cheddar cheese
- hot sauce in the dressing
- 1 1/2 teaspoons ground cumin
- 1 tablespoon honey

Skillet Chicken Divan

- 1 tablespoon butter or margarine
- 4 boneless skinless chicken breasts (about 1 lb)
- Water called for on brown rice package for 1 cup uncooked rice
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup uncooked quick-cooking brown rice
- 3 cups Green Giant Select® frozen broccoli florets, thawed (from 14-oz bag)
- 1/2 cup shredded Cheddar or American cheese (2 oz)
Scalloped Corn

- 1 (15.25 ounce) can whole kernel corn/drained or 16 oz. bag frozen
- 1 (8 ounce) container sour cream--DO NOT USE FAT FREE
- 2 eggs
- 1/2 cup butter
- 2 tablespoons white sugar
- 1 (8.5 ounce) package corn muffin mix-if Jiffy-cut sugar in half
- Can add milk if dry(1/2 cup)
