- 3 tablespoons fresh lime juice
- 2 tablespoons grape seed or vegetable oil $
- 1 tablespoon sugar $
- 2 large firm-ripe mangoes (2 lbs. total)
- 2 medium firm-ripe avocados (1 lb. total) $
- 2/3 cup each thinly sliced green onion and chopped cilantro
- 1 tablespoon minced fresh hot red or green chile (or 1/2 tsp. dried red chile flakes)
- 1 pound (70 to 110 per lb.) peeled cooked shrimp $

Strawberry Cheesecake Salad

Thaw whipped topping and in a large salad bowl stir together whipped topping, yogurts, and pudding powder
- 12 oz. whipped topping
- 1 small package of cheesecake pudding (powder)
- 3 (6 oz) strawberry yogurts (I use Yoplait)
- 1 lb fresh strawberries, sliced
- 3 bananas, sliced (add just before serving or they brown)
- miniature marshmallows (add just before serving)
Caramel Rolls

- 20 Rhodes frozen dinner rolls
- 3/4 C chopped walnuts or pecans
- 1/2 C butter
- 1 LG pkg butterscotch pudding (not instant)

Chile Relleno Casserole Sour Cream Rice

- 16 oz. shredded Monterey Jack cheese
- 16 oz. shredded Cheddar Cheese
- 2 (8 oz) cans whole green chiles (You may need more. I halved this recipe and still used 2 cans)
- 4 eggs, separated
- 1 Tbsp. flour
- 2/3 C. evaporated milk
- salt and pepper to taste

- 2 to 2 1/2 C. cooked rice
- 4 oz. can diced green chiles
- 8 oz. shredded Cheddar or Monterey Jack cheese
