- 1 C butter
- 1/2 C white chocolate chips
- 4 eggs, beaten
- 1 1/2 C sugar
- 1 1/3 C flour
- 1 1/2 tsp vanilla
- Frosting
- 1/2 C butter
- 3-4 oz cream cheese
- 1/3 C white chocolate chips
- 2 C powdered sugar
- 2 Tbsp whipping cream or whole milk
- 1 1/2 tsp vanilla

Lime Coconut Pound Cake

Heat the oven to 350 degrees
- 2 cups flour
- 1 teaspoon baking powder
- pinch of salt
- 1 can unsweetened coconut milk
- 4 Tablespoons butter
- 1/3 cup lime juice (about 7-9 limes)
- zest of 2 large limes
- 1 teaspoon vanilla extract
- 2 teaspoons dark rum, optional (I used Malibu coconut rum)
- 3/4 cup shredded coconut
- additional butter and flour for greasing pan

- 1 1/2 cups whole wheat pastry flour plus 3 tablespoon divided

- Ingredients for Frosting:
- The Cake
- 5 cups all purpose flour
- 4 cups sugar
- 2 Tablespoon cocoa
- 2 teaspoon salt
- 2 teaspoon baking soda
- 4 eggs
- 3 cups oil
- 2 cup buttermilk
- 2 Tablespoon vinegar
- 2 teaspoon vanilla
- 4 oz. red food coloring
- 2 packages of cream cheese at room temperature
- 1 cup of heavy whipping cream
- 4 cups of powdered sugar
- 1 package of double stuffed oreos
- For the Chocolate coating

- 3/4 a cup of dark chocolate chips
- 3 tbs of heavy cream
- 1 tbs of powdered sugar
- (a couple of tsp of water if needed)

Asian Chicken Quinoa Salad

Quinoa, with its nutty flavor and crunchy texture, is a natural addition to Asian Chicken Salad
- 3/4 cup quinoa
- 1 1/2 cups water
- 1 head of cabbage, thinly sliced
- 2 cups julienned carrots
- 1 small onion, diced
- 1 sweet pepper, diced
- 2 cups cooked chicken, diced
- Dressing Ingredients
- 1/4 cup almond butter (or peanut butter or sunflower seed butter)
- 3 tablespoons honey
- 1/3 cup rice vinegar
- 3 tablespoons soy sauce ( I use Bragg’s Liquid Aminos to make this gf)
- 2 tablespoons apple juice (or white grape juice)
- 2 tablespoons oil
- 1 teaspoon grated ginger (tip for saving money on grated ginger)
- 1/4 teaspoon garlic powder

Raspberry Dressing

Combine the raspberries, vinegars, sugar and mustard in a blender until smooth
- 1 cup fresh or frozen (thawed) raspberries
- 3 TBS cup aged balsamic vinegar OR raspberry balsamic vinegar
- 2 TBS Raspberry preserves
- 1 1/2 teaspoons Dijon mustard
- 1/3 cup extra-virgin olive oil
- salt, pepper and garlic to taste
