Rosemary Roasted Red Potatoes

- 3 Tbsp olive oil or vegetable oil
- 1/4 cup finely chopped green onions (3 medium)

- 4-6 boneless pork chops (mine were pretty thick)
- 1 (12 oz) bottle chili sauce

Slow Cooker Pot Roast

- 1 (1 oz) package of dry ranch seasoning mix (found on the salad dressing aisle)

- 1 (1 oz) package of brown gravy mix (found in the gravy aisle)
White Bean and Fresh Mozzarella Salad with Basil

1.Rinse the beans and drain well
- 2 15-ounce cans white beans, drained
- 1 pound fresh mozzarella, cut into bite-sized pieces
- 1 cup lightly packed fresh basil leaves, torn into pieces
- 1 1/2 cups jarred roasted red peppers, drained and sliced
- 6 tablespoons balsamic vinaigrette

- 1 can (40 oz) sweet potatoes in syrup, drained
- 1/3 cup granulated sugar
- 1/2 tsp salt
- 1/4 cup fat-free egg product
- 1/4 cup fat-free skim milk

- 1/4 cup packed brown sugar
- 3 Tbsp Gold Medal all-purpose flour
- 1 tsp cinnamon

Green Bean Casserole

- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 tsp soy sauce
- dash of pepper
- 4 cups cooked green beans*
- 1 can (2.8 oz) French's fried onions (1 1/3 cups)
- Use 16-20 oz fzn green beans or 2 cans green beans (16 oz each), or 1 1/2 lbs fresh green beans.
Shallot & Corn Risotto

1. In 2-qt saucepan, heat the oil & sherry/water to bubbling over medium-high heat
- 1 tsp olive oil
- 1/4 cup dry sherry or water
- 3 Tbsp minced shallots
- 3 1/2 cups chicken broth, warmed in pot
- 2 Tbsp minced sweet red peppers
- 1 cup arborio rice
- 2 cups whole-kernel corn
- 1 Tbsp parsley, minced
- salt & pepper
Hot Artichoke Dip

1) Combine all ingredients (except dipping items) into 1-qt casserole dish
- 1/2 cup mayonnaise
- 1/2 cup grated or shredded parmesan cheese
- 4 medium green onions, chopped (1/4 cup)
- 16 oz (2 cans) artichoke hearts, drained & cut
- Crackers, bread or veggies for dipping
Pumpkin Sausage Pasta

1. Bring one large pot of water up to a boil for your pasta
- 1 pound pasta
- 1 pound pork sausage (or use chicken or turkey sausage)
- 3 garlic cloves, chopped
- 1 onion, chopped
- 1 cup chicken broth
- 1 cup of pumpkin (Libby's, not pie filling!)
- freshly grated Parmesan cheese
- Extra Virgin Olive Oil
- Salt and Pepper
