Rosemary Roasted Red Potatoes

  • 2 1/4 lbs red new potatoes (16-18)
  • 3 Tbsp olive oil or vegetable oil
  • 1/4 cup finely chopped green onions (3 medium)
  • 2 Tbsp chopped fresh rosemary or 2 tsp dried

Preparation time 10mins
Cooking time 85mins


Step 1

1) Preheat oven to 350.
2) Scrub potatoes.
3) Grease rectangular pan with cooking spray.
4) Place potatoes in pan. Drizzle with oil; stir to coat.
5) Sprinkle onions & rosemary; stir.
6) Bake uncovered about 1 1/4 hours, stirring occasionally, until skins are crispy & potatoes are tender.
