Mexican Breakfast Wraps

1) Spray 10" skillet with cooking spray; heat over medium heat
- 1 large green bell pepper (1 cup)
- 1 large onion (1 cup)
- 1 3/4 cups fat-free egg product (from two 8-oz cartons)
- 1/3 cup skim milk
- 1/2 tsp salt
- 1/8 tsp pepper
- 4 fat-free flour tortillas (8-10 inch)
- 1/2 cup shredded fat-free Cheddar cheese
- 1/4 cup chunky-style salsa
Slow Cooker Italian Chicken Noodle Soup

- Layer the chicken, tomatoes, broth, and italian seasoning in your slow cooker
- 1 pound of chicken breasts (frozen or defrosted)
- 1 (28 oz) can of whole peeled tomatoes (I use San Marzano's)
- 1 cup of chicken broth
- 3 tablespoons of Italian seasoning
- 3 cups of your favorite short-cut pasta (I used shells), uncooked
- Parmesan Cheese to garnish
Vegetarian Barley Soup

1. Heat 1 Tbsp olive oil in bottom of dutch oven, or large pot, over medium-high heat until hot
- 1/2 cup onions, chopped
- 1/4 cup celery, chopped
- 1 Tbsp flat-leaf parsley, chopped
- 1/2 tsp garlic, chopped
- 3 1/2 cups vegetable broth
- 1 1/2 cups canned diced tomatoes (with liquid)
- 1/2 cup carrots, peeled and sliced
- 1/4 cup pearl barley
- 1/4 tsp salt
- pinch of black pepper
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1 bay leaf
- 2 cups mushrooms, chopped (6 oz)
Kabob Marinade

Sweet Savory marinade
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 2 tsp Worchesterchire sauce
- 1 tsp Tabasco or other hot sauce
- 1 Tbsp sugar
- 1/2 cup red wine
- 2 tsp salt
Pumpkin Spice Cupcakes

1. Preheat oven to 350 degrees
- Cupcakes
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 4 eggs
- 2 cups all purpose flour
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 tablespoon cinnamon or pumpkin pie spice
- 1 (15 oz) canned pumpkin
- 1 cup pumpkin spice chips, optional
- Frosting
- 1 (8 oz) package cream cheese, softened
- 1 stick of butter, softened
- 1 teaspoon vanilla
- 4 cups powdered sugar
- 1 tablespoon or so of milk
Pork Roast with Rosemary

1) Heat oven to 325. 2) Mix rosemary & garlic in small bowl
- 2 Tbsp chopped fresh or 2 tsp dried rosemary leaves, crumbled
- 4 cloves garlic, finely chopped
- 3-3 1/2 lb pork loin center roast (bone-in)
- 1 tsp salt
- 1/2 tsp pepper
- 1 Tbsp butter or margarine
- 1 small onion, chopped (1/4 cup)
- 2 Tbsp olive oil

1) Preheat oven to 325. 2) In medium bowl, combine cookie crumbs and butter, mix well
- 24 Oreos, finely crushed
- 1/2 cup margarine, melted
- 1 pkg (8 oz) cream cheese, softened
- 1 can (14 oz) condensed milk
- 2 eggs
- 1 Tbsp peppermint extract
- 1/2 cup semi-sweet chocolate chips
- 2 tsp shortening
- 14 creme de menthe thin candies, chopped

- 6 turkey breast (boneless, skinless. Can be turkey breast tenderloins)
- 1 tablespoon olive oil
- 1 onion soup mix (dry, 1 envelope)
Fluffy Fruit Dip

1) In medium bowl, beat cream cheese with mixer on low speed until smooth
- 4 oz 1/3-less-fat (Neudchatel) softened
- 1 container (6 oz) Yoplait Original 99% Fat Free Raspberry yogurt (or any preferred flavor)
- 2 Tbsp powdered sugar
- 1 Tbsp frozen juice concentrate (Raspberry, or any other preferred flavor)
- 1/4 tsp vanilla
- 1/2 cup fat-free whipped topping, thawed
- Assorted fresh fruit for dipping
Instant Pot Garlic Paprika Chicken Thighs

1. Season both sides of the chicken thighs with the smoked paprika, salt and pepper
- 2 lbs boneless skinless chicken thighs
- 2 teaspoons smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons unsalted butter, divided
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon cornstarch
- 1/2 cup freshly grated Parmesan cheese
- 2 cups fresh baby spinach
- Salt and pepper to taste
