Garlic & Herb Chicken Skillet

1. Sprinkle both sides of the chicken with the salt and pepper
- 1 1/2 lbs boneless, skinless chicken thighs (about 6)
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon extra-virgin olive oil
- 10 garlic cloves, peeled and cut in half lengthwise
- 1 cup plus 2 tablespoons chicken stock
- 1 teaspoon minced fresh rosemary*
- 1/2 teaspoon minced fresh thyme*
- 1 tablespoon minced fresh chives

1) In 4 to 5-qt slow cooker, mix all ingredients except pasta & cheese
- 4 cups or 32 oz vegetable or chicken broth
- 4 cups tomato juice
- 1 Tbsp dried basil leaves
- 1 tsp salt
- 1/2 tsp dried oregano leaves
- 1/4 tsp pepper
- 2 medium carrots, sliced (1 cup)
- 2 medium celery stalks, chopped (1 cup)
- 1 medium onion, chopped (1/2 cup)
- 1 cup sliced fresh mushrooms (3 oz)
- 2 garlic cloves, finely chopped
- 1 can (28 oz) Muir Glen organic diced tomatoes, undrained
- 1 1/2 cups uncooked rotini pasta (4 1/2 oz)
- Shredded parmesan cheese, if desired

Caprese Salad

1) Arrange tomatoes & cheese slice alternately on round plate
- 4 medium tomatoes, cut into 1/4" slices
- 8 oz fresh mozzarella cheese, cut into 1/4" slices
- 2 Tbsp extra-virgin olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp chopped fresh basil leaves
- Freshly ground pepper
Corn & Cheddar Enchiladas with Sweet Pepper Salsa

1. Preheat oven to 475. In small pot, combine rice, big pinch of salt and 1 cup water
- 8 flour tortillas
- 2 cloves garlic, diced and smashed into a paste
- 1/2 cup jasmine rice
- 2 ears of corn, kernels removed
- 6 oz cheddar cheese, grated
- 1 lime, halved crosswise
- 6 oz sweet peppers, small diced
- 1 poblano pepper, small diced (wash thoroughly afterwards)
- 1 vidalia onion, small diced
- 1 bunch cilantro, roughly chopped
- 2 Tbsp tomato paste
- 1/2 cup sour cream
Mini Shell Pasta with Creamy Smoked Bacon & Pea Sauce

1) Bring large pan of salted water to boil
- 10 slices smoked bacon, finely sliced
- small bunch fresh mint, finely chopped
- sea salt & freshly ground pepper
- 1 lb dried mini shells (or other pasta)
- olive oil
- pat of butter
- 2 cups frozen peas
- 2 Tbsp heavy cream
- 1 lemon
- 6 oz Parmesan cheese, finely grated

1) Move oven rack to low position so that tops of pans will be in center of oven
- 1 1/4 cups sugar
- 2 Tbsp margarine, softened
- 3 egg whites
- 1 1/2 cups mashed ripe banana (3-4 medium)
- 2/3 cup Yoplait Fat Free plain yogurt (from 2-lb container)
- 1 tsp vanilla
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp cinnamon
- 1 1/2 cups Total Whole Grain, slighly crushed

1) Heat oven to 325. 2) On rack in large shallow roasting pan, place turkey breast, skin side up
- 1 bone-in whole turkey breast (4 1/4-5 lbs), thawed
- 1/2 cup apple juice or dry white wine
- 2 Tbsp chopped fresh or 1 1/2 tsp dried thyme leaves
- 1 tsp paprika
