Macaroni & Cauliflower Cheese Bake

1) Bring large pan of salted water to boil
- 1/2 head of cauliflower, cut into florets, halve the stalk lengthwise and thinly sliced
- 8 oz Cheddar cheese, grated
- 4 oz Parmesan cheese, grated
- small bunch of fresh Italian parsley, finely chopped
- sea salt
- 1 lb dried macaroni (elbows)
- 1 cup sour cream
Chicken & Leek Stroganoff

1) Boil water in kettle. Pour boiling water into large saucepan on HIGH, and add a pinch of salt

- 3/4 cup long-grain rice
- 1 large leek, washed, quartered length-wise, then sliced
- big handful of crimini mushrooms, sliced
- 2 chicken breast fillets, cut into bite-size pieces
- olive oil
- pat of butter
- glass of white wine
- freshly ground black pepper
- bunch of fresh parsley, finely chopped
- 1 1/4 cups heavy cream
- 1 lemon
Vegetable Beef Stew

1) Brown stew meat in skillet
- 1 lb stew meat
- 1 bay leaf
- 1/2 tsp thyme
- 1 lb canned crushed tomatoes
- 1 cups potatoes, chopped
- 1 cup celery, chopped
- 1 cup onion, chopped
- 2 cups carrots, chopped
- 1 clove garlic, minced
- salt/pepper
Broccoli with Pine Nuts

1) In 2-qt saucepan, heat 1 cup water to boiling
- 3/4 lb broccoli, cut into florets
- 1/4 cup butter or margarine
- 1/2 cup pine nuts

Pasta with Bacon & Corn

1. In a large pasta pot, bring water to a boil
- 1 pound pasta
- 10 pieces of bacon, chopped
- 1 small onion, chopped
- 2 cloves garlic, chopped
- 1 cup fresh or frozen corn kernels
- 1 cup cream style corn (canned)
- 1/2 cup Parmesan cheese, grated
- Extra Virgin Olive Oil (EVOO)
- Salt and Pepper to taste
Lazy Lasagne Chili

1) In heated 4-qt pot, add sauage, onion & garlic
- 1 cup zucchini, coarsely chopped
- 1/2 cup onion, coarsely chopped
- 1 lb sweet Italian turkey sausage (4 links)
- 2 garlic cloves, pressed
- 1 jar (26 oz) spaghetti sauce
- 2 cans (14-14.5 oz each) beef broth
- 1 cup water
- 1 1/2 cups (4 oz) uncooked pasta nuggets
- 2 Tbsp snipped basil (optional)
Strawberry-Rhubarb Crisp

1) In 2-qt baking dish, stir together strawberries, rhubarb, tapioca, ginger, 1/2 cup of sugar, 1/4 tsp of cinnamon
- 2 pints strawberries, quartered lengthwise (21 oz fzn strawberries, thawed & quartered)
- 2 cups fresh or fzn & thawed rhubarb (cut into 1/2" pieces)
- 1-2 Tbsp quick cooking tapioca or 1/2-1 Tbsp constarch (If berries are not very juicy, use minimum amount of cornstarch suggested)
- 1/4 tsp ground ginger
- 3/4 cup sugar
- 1 tsp cinnamon
- 1/3 cup whole grain pastry flour
- 1/8 tsp salt
- 2 Tbsp no-trans-fat 68% vegetable oil spread stick or butter
- 1/2 cup old-fashioned oats
- 1 1/2 Tbsp honey
Strawberry Frozen Yogurt

1) In large bowl, mash strawberries with sugar
- 1 pint (2 cups) fresh strawberries or raspberries
- 1/3 cup sugar
- 1 container (2 lb) Yoplait 99% Fat Free creamy strawberry or raspberry yogurt (4 cups)

- 1/2 cup green bell pepper, chopped

- 1 tsp garlic powder
