Alfredo Potatoes

Preparation: Place whole, unpeeled potatoes in a medium saucepan and cover with 1 inch of water
- 8 small red waxy potatoes (may substitute Yukon Gold potatoes), whole and unpeeled
- 2 Tablespoons butter
- 1 clove garlic, finely minced
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (fresh-grated or pre-grated from the deli case)
- 1/2 teaspoon onion powder
- Freshly ground black pepper
- 1 Tablespoon fresh minced parsley
Roasted Tomatoes with Parmesan

Preheat oven to 450° F
- 4 tomatoes, halved horizontally
- 1/4 cup freshly grated Parmesan cheese
- 1 teaspoon chopped fresh oregano
- 1/4 teaspoon salt
- Freshly ground pepper, to taste
- 4 teaspoons extra-virgin olive oil
Fennel Pizza Sauce

Heat oil in a large skillet, add nuts and cook over low heat for 1 to 2 minutes, stirring frequently
- 1 tablespoon olive oil
- 1/4 cup pine nuts
- 1/2 medium fennel bulb -- diced
- 1/2 red onion -- diced
- 2 cloves garlic -- minced
- 1 can crushed tomatos -- drained
Crema di Zucchine Con Mozzarella - Zucchini Purée with Fresh Mozzarella

In a bowl, toss together cheese, 1 tablespoon oil, oregano and pinch salt
- 1/2 pound fresh mozzarella cheese, cut into 1/2-inch cubes
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh oregano leaves Fine sea salt
- 1 small white onion, thinly sliced
- 3 medium zucchini, quartered and cut into Vt -inch pieces
- 3 cups vegetable broth, heated to a simmer
- 4 flat anchovy fillets, roughly chopped
Mashed Plantains and Yams for 100

Fill pressure cooker with sliced plantains
- 30 plantains - peeled, cut into slices
- orange juice, to cover plantains in pressure cooker
- orange zest from 4 oranges
- 1 cup honey
- 2 Tablespoons cinnamon - or to taste
- 1/2 bag brown sugar - or to taste
- 4 cans canned yams or 2 large
- 1 can coconut milk
- 1 lb butter
Deep Fried Short Ribs

Instructions 1. With a cleaver, chop ribs in 1- by 2-inch sections
- 1 1/2 lb beef short ribs
- 1 scallion stalk
- 2 sl fresh ginger root
- 1 clove garlic
- 1 clove star anise
- 1 tb soy sauce
- 1 ts sugar
- 1 ts salt
- 3 dr sesame oil; more or less
- 1 water to cover
- 1 egg
- 3 tb cornstarch
Chicken Piccata

Adjust oven rack to lower-middle position, set large heatproof plate on rack, and heat oven to 200˚F
- 2 large lemons
- 4 boneless, skinless chicken breasts, trimmed of excess fat and cut into thin strips
- salt and ground black pepper
- 1/2 cup all-purpose flour
- 4 T vegetable oil
- 1 small shallot, minced
- 1 cup chicken broth
- 2 T drained small capers
- 3 T unsalted butter, softened

Chef Jim's Chile Relleno Casserole

Method: Layer half of the green chilies in a 9x13 baking dish
- 1 lb Monterrey Jack Cheese, shredded
- 1 lb cheddar cheese, shredded
- 28 oz. can chopped green chilies or fresh chilies (roasted/peeled/chopped)
- 12 oz. sour cream

New Orleans Oysters On Pastry

From the New Orleans Cooking Experience
- 1 stick unsalted butter
- 1/2 cup finely minced celery
- 2 bunches finely sliced green onions and tops
- 4 large cloves garlic, minced
- 1 box sliced mushrooms, washed
- 4 T all-purpose flour
- 3 pints fresh oysters, drained (reserve liquid)
- 1/2 cup dry white wine or vermouth
- 1 T Lea and Perrins Worcestershire Sauce
- 1 t dried thyme
- Tabasco or Crystal sauce to taste
- 1/2 cup finely minced Italian parsley

Machboos or Fooga (Traditional United Arab Emirates Dish)

This dish is very similar to the "chicken, rice, and spices" recipe I have on recipezaar but the changes made/added...
- 4 cups water
- 4 chicken bouillon cubes or 5 teaspoons chicken stock powder
- 2 tablespoons olive oil
- 8 -10 bone-in chicken pieces, skin removed ( if it is the breast pieces, cut those in half since they are very large)
- 2 whole dried limes ( loomi)
- 1/8 teaspoon saffron
- 1 large onions, chopped
- 1 large tomatoes, chopped
- 1 garlic cloves, minced
- 1/2-3/4 teaspoon ground cinnamon
- 1 1/2 teaspoons ground turmeric
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons curry powder
- 1/2 teaspoon cayenne pepper (optional) or 1/2 teaspoon chili powder (optional)
- 3/4-1 teaspoon salt
- 2 cups basmati rice, rinsed and drained
