Roasted Baby Potatoes with Capers and Rosemary

Preheat oven to 400°F. Arrange potatoes in single layer on large rimmed baking sheet
- 3 pounds assorted baby potatoes (such as red-skinned, White Rose, and baby purple), halved
- 1/4 cup extra-virgin olive oil
- 3 sprigs fresh rosemary, each broken into 4 pieces plus more for garnish
- 3 large garlic cloves, halved
- 1 1/2 teaspoons coarse kosher salt
- 3 tablespoons drained capers
- fresh thyme
Pressure Cooker Naughty Stuffed Onions

Small onions are a little more work but make for a stunning presentation
- Olive Oil Equipment:
- 12 small or 6 large onions
- 5 Medium Potatoes
- 1 Egg
- 3 Tbsp of Fresh Thyme (or any other fresh herb will do!)
- salt and pepper
- 2 cups of vegetable stock
- 3/4 cup of Parmiggiano Reggiano Cheese, grated
- trivet (or suitable substitute)
- pan-in-pot insert (or suitable substitute)
- tin foil
- tongs
Broccoli Tarts

Chop broccoli. Mix the next 5 ingredients, then add broccoli
- 1 C. cooked broccoli
- 1/4 lb. Swiss cheese, shredded
- 3 green onions, minced
- 1 C. light cream
- 3 eggs, beaten
- 1 tsp. salt
- 1 stick soft butter
- 3 oz. soft cream cheese
- 1 C. flour

DeeBee's Buffalo Chicken Stuffed Jalapeños Poke a small hole in the bottom of each jalapeño
- DeeBee's Buffalo Chicken Stuffed Jalapeños
- 1 can (about 10-12 oz.) of cooked chicken, drained well and finely flaked (found near the tuna fish in your supermarket)
- 6 ounces cream cheese
- 1/4 cup Louisiana hot sauce
- 1/4 cup bottled ranch dressing (or bleu cheese dressing)
- 1/2 cup shredded cheddar cheese
- TOPPING: 1/2 cup shredded cheddar cheese (optional)
- DeeBee's Artichoke-Garlic Stuffed Jalapeños
- 1/2-cup Cheddar Cheese, grated
- 1/2 - cup Mozzarella cheese, grated
- 2 TB. grated Parmesan cheese (or Romano cheese)
- 1/2-cup mayonnaise
- 2 TB. minced onion
- 2 oz. cream cheese
- 1 tsp. Worcestershire sauce
- 2 cloves garlic, minced Dash of cayenne pepper
- 1 (6-oz. jar) marinated artichokes, drained and finely chopped
- DeeBee's Spinach and Cheese Stuffed Jalapeños
- 3 TB. Butter
- 1/2 cup finely chopped onion
- 2 TB. water
- 1 TB. flour
- 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry. (I use a potato ricer to get all the water out of the drained spinach.. but you can use paper towels,too)
- 4 ounces Cheez Whiz cheese product (or Velveeta)
- 1 jumbo egg, beaten
Rum Balls

Method: Combine wafer crumbs, sugar, nuts, corn syrup and rum with your hands
- 2 cups finely crushed chocolate wafers
- 1 cup sifted confectioner’s sugar
- 1 cup finely chopped pecans
- 1/4 cup light corn syrup
- 1/4 cup plus 2 T dark rum
- 1 cup chocolate sprinkles

Put Instant Pot onto Sauté
- 2 Tbsp oil, bacon fat, or butter
- approx 2 lb bottom round beef roast
- 2 onions, diced
- 2 carrots, diced
- 1 rib celery, diced
- 1/2 cup red wine vinegar
- 1/2 cup red wine
- 1/2 cup beef broth
- 4 bay leaves
- salt and lots of freshly ground pepper
- 1 tsp granulate sugar (optional)

Deluxe Crockpot Oatmeal

Directions Grease the inside of crockpot
- 2 C. milk
- 1/4 C. brown sugar
- 1 Tbs. butter, melted
- 1/4 tsp. salt
- 1/2 tsp. cinnamon
- 1 C. quick cooking oats
- 1 C. finely chopped apple
- 1/2 C. raisins and/or dates
- 1/2 C. chopped walnuts or almonds
Alfredo Sauce

Method: Heat the butter in a skillet, over medium heat
- 2 T butter
- 1 small onion, thinly sliced
- 4 cups whipping cream
- 2 T parmesan cheese
- 1 t fresh grated nutmeg
- 1/2 t salt
- 1/2 t pepper
Lemon Vodka Shrimp Pasta

Method: Cook pasta and cool in ice bath
- 8 oz. penne pasta (cooked)
- 48 oz. lemon vodka sauce (next page)
- 3 pounds shrimp, peeled and deveined
- 2 T garlic, chopped
- 3 oz. capers
- 4-1/2 cups crushed tomatoes
- 4 T fresh basil, cut in thin strips
- 6 T green onions, sliced
- 1-1/2 cups parmesan Cheese, shredded
- 1/4 oz. olive oil
- 3 t seasoned salt
Honey Baked Chicken
