Honey Glazed Carrots

In a medium saucepan, bring water to a boil
- Salt
- 1 pound baby carrots
- 2 tablespoons butter
- 2 tablespoons honey
- 1 tablespoon lemon juice
- Freshly ground black pepper
- 1/4 cup chopped flat-leaf parsley

Roast in the oven or BBQ
- Super Easy
- 1 1 1 package of Cornbread mix
- 1/2 1/2 1/2 cup milk
- 1 1 1 egg
- Some Super Sharp Cheddar Cheese
- 1 1/2" the cornbread and fill the jalapenos half full. Put a long square (1/4" sq. by 1 1/2" long) of cheese in the middle. A little salsa in the cornbread mix while you're making it is kinda good too.
- Breakfast Jalapenos
- 2 2 2 eggs
- Whip up the eggs and fill the jalapenos up, or half way and put in some cheese or sausage.
- Pizza Peppers
- Pepperoni
- Mozzarella Cheese
- Tomatoes or tomato sauce
- Italian seasoning
- Meat Jalapenos
- to your choice of raw meat or sausage in the jalapeno. Be sure and poke a hole in the bottom of the jalapeno to let it drain while it cooks.
- Hill Country Stuffed Jalapeno
- 1 1 1 cup shredded cheddar cheese
- 1/2 1/2 1/2 cup minced shrimp or crab
- 1/2 1/2 1/2 teaspoon Mrs. Dash Herb and Garlic seasoning
- 1 1 1 egg beaten well
- bacon
- 1/3 all ingredients together and stuff in Pepper. Place 1/3 piece of bacon on top and secure with a tooth pick and grill
- I have also used well ground sausage instead of shrimp.

- 1 32 oz. bag frozen hash brown potatoes
- 1 lb. of bacon diced, cooked and drained or 1 lb. cooked ham, cubed
- 1 medium diced onion
- 1 green bell pepper diced
- 1 1/2 C. shredded cheddar or Monterey Jack cheese
- 1 dozen eggs
- 1 C. milk
- 1 tsp. salt
- 1 tsp. pepper (more or less to taste)
Creole Tomato Casserole

Directions In a large heavy pot, heat the oil over medium heat
- 3 Tbs. vegetable oil
- 2 C. chopped onions
- 1 bunch green onions - chopped
- 1 C. chopped bell peppers
- 1 C. chopped celery
- 2 cloves garlic - minced
- 1 lb. ground beef
- 6 Creole tomatoes - peeled, seeded and chopped
- 1 tsp. salt
- 1/4 tsp. cayenne
- 1 tsp. dried oregano leaves
- 1/2 tsp. dried sweet basil
- 1 C. fine bread crumbs
- 6 Tbs. butter - melted
- 1/4 C. grated Parmesan cheese

Double Tomato Bruschetta

Directions: 1. Preheat the oven on broiler setting
- 6 roma (plum) tomatoes, chopped
- 1/2 cup sun-dried tomatoes, packed in oil
- 3 cloves minced garlic
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1/4 cup fresh basil, stems removed
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 French baguette
- 2 cups shredded mozzarella cheese
Cherry Jubilee Sauce

1. Combine sugar and cornstarch in med saucepan
- # 1/2 cup sugar
- # 1 tablespoon cornstarch
- # 1/4 cup water
- # 1/4 cup orange juice
- # 3 cups sweet fresh cherries, pitted
- # 1/2 teaspoon orange rind
- # 1/4 cup brandy (optional)

- 1/2 pound ground beef
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
