Candied Jalapenos - Cowboy Candy

- 4 pounds fresh jalepeno peppers, sliced
- 2 pounds onions, diced
- 1/2 cup vinegar
- 1/2 cup water
- 6 to 8 cups sugar
- 2 tablespoons mustard seed
- 1 teaspoon turmeric
- 2 teaspoon celery seed (optional)
- 1 tablespoon garlic powder
- 1 teaspoon ginger
Ham Salad

Mix everything but the salt, pepper and cayenne in a large bowl
- 2 cups finely diced ham
- 3 hard-boiled eggs, chopped
- 1/4 cup sweet pickle relish
- 1/4 cup mayonnaise
- 2 Tbsp minced onion
- 2 Tbsp minced celery
- 2 Tbsp minced red bell pepper
- 1 Tbsp chopped fresh parsley
- 2 Tsp Dijon mustard
- 1 Tbsp lemon juice
- A large pinch of cayenne (optional)
- Salt and black pepper to taste
Grape Sauce

Preheat oven to 450°. Heat 1 teaspoon oil in a medium saucepan over medium heat
- 2 teaspoons olive oil, divided
- 1/3 cup chopped shallots
- 1 tablespoon minced garlic
- 2 cups coarsely chopped seedless red grapes
- 2 tablespoons tamari sauce or soy sauce
- 2 tablespoons honey
- 1 teaspoon grated peeled fresh ginger
- Dash of five-spice powder
- 1 1/4 pounds pork tenderloin, trimmed
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

- 1-1/2 cups sifted pastry flour
- 3 t baking powder
- 1/2 t salt
- 1/2 cup raisins
- 2 eggs
- 1/4 cup sugar
- 1-1/2 cups maple syrup
- 1 cup half and half

Melt bacon fat in heavy pan
- 1 can refried beans - 10 oz. or so
- 2 tablespoons bacon fat or lard
- 2 tablespoons pickled jalapeno juice
- 1 tablespoon milk
- 1 clove garlic,minced or 1 teaspoon garlic powder
- 1/2 small onion, minced
- 1/2 cup chopped tomato
- Crushed red peppers - 1/4 teaspoon or to taste
- 1/4 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1 teaspoon chili powder
- 1 teaspoon hot sauce, or to taste
- 1/2 teaspoon cumin
- 1/2 teaspoon taco seasoning
- 1 teaspoon sofrito
- 1/2 cup shredded Monterey Jack or cheddar cheese
- 2 tablespoons salsa
- 1/4 cup chicken broth or water - add enough to desired consistency

- one stick unsalted butter, melted, plus more for greasing

- 1/2 cup self rising flour

Cajun Appetizer Meatballs

1.Preheat oven to 350 degrees F (175 degrees C)
- 1 pound lean ground beef
- 1 1/2 teaspoons hot pepper sauce
- 2 tablespoons Cajun seasoning
- 1 tablespoon Worcestershire sauce
- 1 tablespoon dried parsley
- 1/4 cup finely chopped onion
- 1/4 cup fresh bread crumbs
- 1/4 cup milk
- 1 egg
- 1/2 cup barbeque sauce
- 1/2 cup peach preserves

- 2 pkgs. frozen asparagus pieces
- 1 tsp. salt
- 1/8 tsp. pepper
- 3 eggs
- 1 1/2 C. saltine crackers, crushed
- 1 sm. jar diced pimientos
- 1 8oz. pkg. Velveeta cheese, cubed

Peach Cobbler

Directions: 1 Cook peaches, sugar, cornstarch and water on stove until thick
- 3 cups fresh peaches, sliced
- 1 cup sugar
- 1 tablespoon cornstarch
- 3/4 cup water
- 2/3 cup Bisquick (I used 1 c.)
- 3 tablespoons sugar
- 3 tablespoons butter, melted
- 1/2 cup milk
- vanilla ice cream or whipped cream
