Chicken Fried Rice for 100

Heat oil in roasting pan. Add garlic and ginger - stir fry until fragrant
- 20 lb shredded chicken
- 4 insert pans of cooked and cooled basmati rice
- 1 cup oil
- 1 cup chopped garlic
- 1 cup chopped ginger
- 8 cups each sliced vegetables (carrot, cabbage, fresh green peas, green onion, yellow onion, celery cut on the dias, julienned carrots)
- 2 bags frozen green peas
- 1 cup + soya sauce
- 4 pkgs fried rice seasoning
- 4 tsp fresh pepper powder
- 12 eggs + 1 teaspoon salt
- sesame oil
Caper Sauce

Saute onions and garlic briefly in butter
- 1/4 cup minced onion 1 garlic clove, minced Butter
- 4 tablespoons flour
- 1 cup beef broth
- 1 cup sour cream
- 1/4 cup capers, drained Salt and pepper to taste

Preheat the oven to 325 degrees F
- Glaze Ingredients:
- 1 carrot, coarsely chopped
- 1 rib celery, coarsely chopped
- 1/2 onion, coarsely chopped
- 1/2 red bell pepper, coarsely chopped
- 4 white mushrooms, coarsely chopped
- 3 cloves garlic, coarsely chopped
- 2 1/2 pounds ground chuck
- 1 tablespoon Worcestershire sauce
- 1 egg, beaten
- 1 teaspoon dried Italian herbs
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1/2 teaspoon cayenne pepper
- 1 cup plain bread crumbs
- 1 teaspoon olive oil
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 2 tablespoons Dijon mustard
- hot pepper sauce to taste

- 1 tablespoon of curry powder
- 1 cup of heavy cream
- 1 4oz can of chopped green chiles, or 1/2 cup of fresh roasted, peeled chiles
- salt and pepper to taste

Combine all ingredients, except the vinegar and olive oil
- 2 chayote squash, halved, cored and cut into fine dice (do not peel)
- 1 jalapeno, halved, seeded and cut into fine dice
- 1 red bell pepper, halved, seeded and cut into fine dice
- 1 firrn avocado, halved, pit removed and cut into fine dice
- 1/2 cup finely sliced green onion
- 2 T chopped cilantro
- 1 t oregano
- 2 T lime juice
- 1 t red chile powder
- 1/4 lb finely cubed cheddar cheese
