Bread Machine Cinnamon Rolls

Preparation: Add ingredients according to manufacturer's suggested order and set on dough cycle
- 3/4 cup water
- 1 egg, lightly beaten
- 2 teaspoons vanilla extract
- 3 cups all-purpose flour
- 6 tablespoons sugar
- 1/4 cup softened butter
- 1 teaspoon salt
- 2 tablespoons dry milk
- 1 1/2 teaspoons yeast
- Filling***
- 1/4 cup butter, melted
- 1/3 cup brown sugar, mixed with 1 teaspoon cinnamon
- 1/2 cup finely chopped pecans or raisins, optional
- Icing***
- 3 tablespoons butter
- 1 teaspoon vanilla
- 3 tablespoons hot water
- 2 cups confectioners' sugar
Aioli

Method: Chop garlic finely and pound in mortar with pinch of salt until smooth paste is made
- 8 cloves of garlic
- 3 egg yolks
- 2 cups olive oil
- juice from one lemon
- salt to taste
Key Lime Bars

Directions Crust: Mix all ingredients and press into a 13x9" baking pan

- 1/2 C. confectioners' sugar
- 2 C. flour
- Filling:
- 4 eggs -- beaten
- 2 C. sugar
- 6 Tbs. Key lime juice
- 4 Tbs. flour
- 1 pinch salt
- 1 tsp. baking powder

Basil Shrimp with Feta and Orzo

Preheat oven to 450. Coat inside of bag with cooking spray and place on large shallow pan
- 1 regular size foil oven bag
- Cooking spray
- 1/2 cup uncooked orzo
- 2 teas. Olive oil (divided use)
- 1 cup diced tomatoes
- 3/4 cup sliced green onions
- 1/2 cup crumbled feta
- 1/2 teaspoon grated lemon rind and 1Tbs. fresh lemon juice
- 1/4 teas. Salt and 1/4 teas. Black pepper
- 3/4 pound large raw shrimp
- 1/4 cup chopped fresh basil
Whole Pea Soup

If you do not have a pressure cooker, follow the recipe using a large pot on the stove top
- Broth:
- Pressure Cooker Whole Pea Soup
- Ingredients
- 1 block salt pork, cut into strips
- 1 ham bone
- 2 smoked pork hocks
- water or chicken broth
- Soup:
- 2 lbs whole yellow peas - soaked overnight or for 10 hours (5 cups)
- 3 stalks celery, finely chopped
- 2 carrots, finely chopped
- 2 medium onions, finely chopped
- 1 teaspoon dried thyme
- 1 tablespoon Coleman dry mustard
- salted herbs or salt
- 2 tablespoons butter
Round Steak

Heat pressure cooker. Add shortening; brown the round steak
- 1 1/2 to 2 pounds round steak, cut in 4 to 6 pieces
- 2 tablespoons shortening
- 2 slices bacon, diced
- 6 small white onions
- 6 medium potatoes, peeled and halved
- 2 cans mushrooms with liquid (4 ounces each)
- 1/2 cup dry white wine
- 1 tablespoon minced fresh parsley or 1 teaspoon dried parsley flakes

In a heavy saucepan, begin to brown ground beef, then add onion and garlic; continue cooking until meat is browned
- 3 lbs ground beef
- 1 1⁄2 cups diced onions
- 3 cloves garlic, minced
- 3 ⁄4 cup brown sugar
- 2 tablespoons prepared mustard
- 1 1⁄2 teaspoons salt
- 1 ⁄4 teaspoon thyme
- 2 cups ketchup
- 1 cup prepared chili sauce (like Heinz brand)
- 1 ⁄2 cup water
- 1 ⁄4 cup Worcestershire sauce
- 2 tablespoons lemon juice
