Chicken Fried Rice for 100

  • 20 lb shredded chicken
  • 4 insert pans of cooked and cooled basmati rice
  • 1 cup oil
  • 1 cup chopped garlic
  • 1 cup chopped ginger
  • 8 cups each sliced vegetables (carrot, cabbage, fresh green peas, green onion, yellow onion, celery cut on the dias, julienned carrots)
  • 2 bags frozen green peas
  • 1 cup + soya sauce
  • 4 pkgs fried rice seasoning
  • 4 tsp fresh pepper powder
  • 12 eggs + 1 teaspoon salt
  • sesame oil



Step 1

Heat oil in roasting pan. Add garlic and ginger - stir fry until fragrant. Add vegetables, pepper and fried rice seasoning- cover - cook on stove top until vegetables are cooked - or bake in 375 degree oven - stir frequently

On stove top, scramble eggs.

Add eggs, soy sauce, and chicken - stir and heat through. Place in pans and keep warm.

Sprinkle with sesame oil and serve
