Sweet and Sour Russian Cabbage Soup

1. Heat oil and butter in pressure cooker, just until butter foams
- 1/4 cup oil
- 4 tablespoons butter or
- margarine
- 1 onion, thinly sliced
- 4 cups grated red cabbage
- 4 cups grated white cabbage
- 2 cloves garlic, minced
- 1/2 cup seedless raisins
- 1/2 cup dark brown sugar
- 1 teaspoon caraway seeds
- 2 quarts chicken stock
- 1 cup dry white wine
- 1/4 cup cider vinegar

A great recipe for tough cuts of meat
- Gorgonzola Sauce:
- 4 pounds beef brisket or top round
- Salt and freshly ground pepper
- 4 cups beef stock or broth
- 4 About 4 cups water, enough to cover the beef
- 2 onions, peeled and quartered
- 4 celery stalks, cut in 1/2
- 1 bay leaf
- 4 carrots, peeled and cut into thirds
- 1 pound small boiling potatoes
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Gorgonzola Sauce, recipe follows
- Salsa Verde, recipe follows
- 4 ounces Gorgonzola
- 2 cups mayonnaise
- 1 tablespoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Put all the ingredients in a food processor and combine until smooth. Serve in a side dish.
- Yield: 1 1/4 cups
- Spicy Salsa Verde:
- 1 cup chopped parsley leaves, about 1 bunch
- 2 shallots, chopped
- 2 tablespoons chopped capers
- 2 cloves garlic, minced
- 2 teaspoons hot sauce, or 1/4 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons sherry vinegar
- 1 1/2 cups extra-virgin olive oil
- In a bowl, stir all the ingredients together until combined. Serve in a side dish.
- Yield: 1 1/2 cups
Green Beans With Bacon and Onion Sauce

How to make it Cook beans in salted water, drain & save liquid
- 1 lb. green beans, fresh or frozen - I use fresh
- 1 c. boiling salted water
- 6 slices bacon, diced
- 1 small onion, chopped
- 1 T. flour
- salt and pepper to taste
- 1 - 1 1/2 T. vinegar
Caramelized Onions

The caramelized onions come out a light tan color and don't have the body to serve beside steak, for example
- 2 Tbsp butter
- 2 Tbsp olive oil
- 3 large onions, sliced approximately 1/4 inch thick
- 1 pinch baking soda
- 2 tsp balsamic vinegar
- 2 tsp brown sugar
- salt, to taste

- 3 to 3-1/2 pounds beef short ribs (2-1/2 inch thick), excess fat trimmed

- 1/3 cup chopped parsley
- 1 cup crushed canned tomatoes
- 1-1/2 cups beef broth
- 1/4 cup sherry
- 1 tablespoon brown sugar
- 1-1/2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon dried tarragon
- 6 carrots, cut into 2-inch pieces
- 6 medium-size potatoes, peeled and cut into 1/2-inch slices
- 1/4 cup sour cream
- 1/4 cup butter, softened
- 1-1/2 tablespoons potato starch or flour
