Green Beans With Bacon and Onion Sauce

  • 1 lb. green beans, fresh or frozen - I use fresh
  • 1 c. boiling salted water
  • 6 slices bacon, diced
  • 1 small onion, chopped
  • 1 T. flour
  • salt and pepper to taste
  • 1 - 1 1/2 T. vinegar

How to make it

Cook beans in salted water, drain & save liquid. Saute bacon; add onion & cook until soft. Discard all but 1 T. bacon grease - stir in flour and cook until lightly browned. Add 1 c. liquid and cook until sauce is smooth. Add vinegar and pour sauce over beans.
