Directions In a large pot of boiling salted water, cook the orecchiette until al dente
- 3/4 pound orecchiette pasta
- 4 tablespoons unsalted butter
- 1 bunch of scallions, thinly sliced
- 3 garlic cloves, thinly sliced

- salt and freshly ground pepper
- 2 tablespoons extra-virgin olive oil
- 4 ounces of baby arugula or spinach
- 6 large (or 1/4 # baby) swiss chard leaves, stems and central ribs discarded, leaves coarsely chopped

- 1/2 pound monterey jack cheese, grated
- 1 can (4 oz) green chilies, chopped

- 2 large ripe avocados

Combine the yeast and granulated sugar in the bowl of a stand mixer fitted with a dough hook

Directions Preheat oven to 450 degrees F
- 1 can (8 oz.) refrigerated pizza dough
- 6 large eggs, scrambled, but still moist
- 2 Tbs. finely chopped onion
- 3 Tbs. finely chopped green pepper

- One medium (16oz or so) can whole tomatoes--canned works better here (really!)
- One bunch cilantro, washed
- A few cloves of garlic
- A few peppers (I use two jalapeno-class ones with seeds removed for light spice--you can leave the seeds in and/or use more if you like things spicy).
- 1/2 c Red wine or Red wine vinegar (either will work, each giving a slightly different flavor to the dish)

- 3-1/2 pounds mirliton/chayote squash (about 6 large), peeled, seeded, cut into 1/3-inch dice (8 cups)
- 1-1/2 cups chopped red onion
- 1 cup chopped red bell pepper
- 1 cup chopped green bell pepper
- 1 cup thinly sliced green onions (about 6)
- 6 tablespoons distilled white vinegar
