Pressure Cooker Chicken Mole

Directions: Blend mole sauce with chicken broth
- 1 8 1/4 oz jar mole sauce (such as, Dona Maria)
- 3 mole jars full of no sodium chicken broth (approx 25 oz)
- 1 pound frozen chicken tenders
- Cooked white rice
- Garnish with: toasted pepitas and crumbled cojita cheese (if desired)
Bacon Wrapped Sesame Bread Sticks

Preheat oven to 350°
- Ingredients
- 24 sesame breadsticks (4 1/2-inch long)
- 12 slices bacon, cut in half to make 24 shorter slices
- 1 cup freshly grated parmesan cheese
- Mix into cheese (whatever variations you like)
- 2 teaspoons garlic salt or 2 teaspoons garlic powder
- crushed red pepper flakes (optional)
- dry ranch dip mix (optional)

- brown sugar (optional)

- 1 medium onion, finely chopped
- 3 stalks celery, finely chopped
- 1/2 red bell pepper, finely chopped

- 1 teaspoon cayenne pepper
- 1-1/2 teaspoon garlic powder
- 1/2 teaspoon Cajun or Creole seasoning
- 1 T Dijon or Creole mustard
- 1 lb fresh fish, poached and flaked
- 1/4 teaspoon salt
- fresh ground pepper to taste

How to make it Bring 5 cups of water and 1 tbsp salt to a boil in a large saucepan
- 1 1/2 lbs fresh green beans
- 4 oz fresh shitake mushrooms
- 1/2 cup grated parmesan cheese (optional)
- 1/2 cup plain bread crumbs (optional)
- 2 slices pancetta
- 1/4 cup extra virgin olive oil
- 1 tbsp butter
- 1/4 cup fresh Italian parsley, chopped
- pinch of fresh basil and oregano, minced
- pinch of red pepper flakes
- 8 cloves of garlic, peeled
