Pickled Shrimp

Bring water to a boil in a large saucepan; add shrimp, and cook 3 to 5 minutes
- 6 cups water
- 1 cup vegetable oil
- 2 pounds unpeeled medium-size fresh shrimp
- 1 cup vinegar
- 3/4 cup water
- 1 medium onion, sliced and separated into rings
- 1/4 cup fresh lemon juice
- 2-1/2 teaspoons celery seeds
- 1 (2-1/4-ounce) jar capers,undrained
- 1-1/2 teaspoons salt
- 1 teaspoon sugar
- 3 bay leaves
- Dash of hot sauce
Orange Glazed Carrots

Directions Place carrots in a shallow saucepan, and cover with water
- 1 pound baby carrots
- 1/4 cup orange juice
- 3 tablespoons brown sugar
- 2 tablespoons butter
- 1 pinch salt

Directions Preheat oven to 375 degrees
- 2 C. sifted all-purpose flour
- 1 1/2 tsp. double-acting baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 Tbs. sugar
- 1/4 C. chilled shortening
- 1/2-1 C. raisins or currants
- 2 tsp. caraway seeds
- 1 beaten egg
- 2/3 C. buttermilk
Chef Jim's Lamb Irish Stew

Brown meat in bacon fat, remove deglaze pan with stock and wine Add all other ingredients and mix
- 6 slices cooked bacon, crumbled
- 2 Tablespoons bacon fat
- 2-3 lbs. boneless lamb, cut into 1-2 inch cubes
- 14 oz Guinness Beer
- 1 cup red wine
- 6 cloves minced garlic
- 2 Tablespoons tomato paste
- 1 Tablespoon sugar
- 1 Tablespoon dried Thyme
- 1 Tablespoon Worcestershire Sauce
- 2 large onions, chopped
- 3 carrots coarsely chopped
- 4 stalks celery, chopped
- 3 leeks, chopped (white parts only)
- 1 rutabaga chopped
- 4 Tablespoons cornstarch and water to mix for thickener
Apple, Sausage and Cheddar Torte

Heat oven to 425 degrees. Place pie crust in 9-inch pie pan and bake 7 to 9 minutes or until light golden brown
- 1 ready-made pie crust
- 2 cups N.C. apples, sliced and peeled (use a flavorful apple such as Pink Lady, Granny Smith or Honeycrisp)
- 1/2 cup chopped onion
- 1 tablespoon sugar
- 1/4 teaspoon cinnamon

- 3/4 pound sweet Italian or breakfast sausage (bulk or removed from casings)

Greek Lemon Potatoes

- 1/3 cup lemon juice
- 1 head garlic, chopped fine
- 1 tablespoon oregano (dry is fine)

1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer
- 1 1/8 cups orange juice
- 2 tablespoons oil
- 2 tablespoons honey
- 3 cups flour
- 1 tablespoon powdered milk
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice

- 2 1/4 teaspoons yeast

Chile Colorado - Red Chile Sauce
