- 1 cup cornmeal
- 2-1/4 cups all-purpose flour
- 1 teaspoon salt
- 3/4 teaspoon ground black pepper
- 1 (32 ounce) jar dill pickle slices or buy whole pickles and slice them
- 1 cup vegetable oil for deep frying
- salt and pepper to taste
Million Dollar Chicken

Place chicken pieces in a casserole
- 8 pieces of Tyson chicken
- 250 ml Kraft mayonnaise (1 cup)
- 125 ml Mango chutney (1/2 cup)
- 10 ml French’s mustard (1 tablespoon)
- 65 ml Smuckers apricot jam (1/4 cup)
- 187 ml water (3/4 cup)
- 1 packet Lipton onion soup powder (55g)
Sausage Bread

Method: Cook breakfast sausage and smoked sausage in frying pan until they start to brown; drain
- 1-1/2 lbs. sausage, casings removed
- 1/2 lb. cubed smoked sausage
- 1 cup diced ham
- 1 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup celery
- 1/2 t cajun seasoning
- 1 t hot sauce
- 4 T flour
- beef broth
- 1/4 t oregano
- 2 t parsley
- 1/4 cup cheddar cheese, shredded
- 2 T minced green onions
- salt and pepper
- 2 (1-lb.) frozen bread dough, thawed
Christmas Stollen

Heat oven to 375, bake for 45 minutes or until golden and crusty
- 1/2 1/2 1/2 c seedless raisins
- 1/2 1/2 1/2 c dried currants
- 1 1 1 c mixed candied citrus peel
- 1/2 1/2 1/2 c rum
- 1 rum over fruits and soak for 1 hour, then drain and keep rum for dough
- 1/4 1/4 1/4 c warm water
- 2 2 2 pkg dried yeast
- 1 1 1 T sugar
- 2 2 2 T flour
- 10 flour, yeast and sugar, mix with water and let stand for about 10 min.
- 3/4 3/4 3/4 cup butter
- 1 1 1 cup milk
- Melt butter, take pan off flame and pour milk into butter, add reserved rum
- 5 5 5 c flour
- 1/2 1/2 1/2 c sugar
- 1/2 1/2 1/2 tsp salt
- 1/2 1/2 1/2 tsp almond extrct
- 1/2 1/2 1/2 tsp lemon peel
- 2 2 2 eggs
- Add these ingredients plus the melted butter/milk/rum on top of the yeast sponge in your Kitchenaid, blend slow, then beat until dough is smooth and holds together.
- 1 1 1 c slivered almond
- to reserved fruits and almonds into dough by hand, place into greased bowl, turn to grease top and cover, let rise until doubled.

- 1/2 lb. pork rinds
- 1 or 2 pigs feet or smocked hocks
- 1 T salt
- 12 cups chicken broth
- 2 to 3 lbs nixtamal (hominy), washed (if necessary)
- juice of 1 lime
- 4 T ground red chile (mild/medium/ or hot)
- 8 cloves garlic, crushed
- 2 cups chopped onion
- 1 cup chopped each carrrot, celery, green chiles
- 1 can chopped tomatoes
- 4 or 5 dried chipotle pods or 4 canned
- 3 T oregano, rubbed between hands
- lime wedges, chopped cilantro and onion-for garnish
