- 1 oz sambuca
- 1/2 cup cream
Fried Fish Sandwich

Mix the beer, flour, baking powder, salt and egg into a batter in a bowl
- 1 (12 ounce) bottle beer
- 2 cups flour
- 1 teaspoon baking powder
- 1 large egg, lightly beaten
- 1 pound cod fillets, or halibut, or haddock, etc., cut into sandwich sized pieces
- salt and pepper to taste
- 1/2 cup flour
- oil for frying
- 1 baguette, cut into 4 sandwich sized pieces and sliced in half
- 2 cups coleslaw
- 1/2 cup tartar sauce

Directions Preheat oven at 425 degrees
- 1 lb. ground beef
- 1 pkg. frozen mixed vegetables
- 1 can creamed chicken soup
- 1/2 soup can water
- 1/2 pkg. dry onion soup mix

New Orleans Stuffed Mirlitons

Mirlitons are also called achiote squash
- 6 medium-to-large mirlitons
- 1 egg, beaten
- 3 tablespoons oil or butter or bacon grease
- Salt and pepper to taste
- 1 medium white onion, chopped
- 3/4 cup seasoned bread crumbs
- 2/3 cup thinly sliced green onions
- 1 pound raw shrimp, peeled
- 2 cloves garlic, minced
- 1/2 pound ham, diced
- 1/2 cup celery, minced
- Dash Tabasco
- 1/4 cup parsley, minced
Meyer Lemon Cream Sauce

Goes well with smoked salmon in puff pastry
- 1/2 cup (125 mL) whipping cream
- 1 tbsp (15 mL) grated Meyer lemon zest
- 3 tbsp (45 mL) Meyer lemon juice
- 1/2 tsp (2 mL) salt
- 1/4 cup (50 mL) grated Parmesan cheese
- 2 tbsp (30 mL) finely chopped fresh parsley or dill
- Note: regular lemons can also be used
Shrimp Cognac and Baked Cheese Grits

Preheat an oven to 350 degrees F (175 degrees C)
- 6 cups water
- 3/4 teaspoon salt
- 2 cups yellow grits
- 1 3/4 teaspoons salt

- 2 ounces fresh morel mushrooms, chopped
- 3 ounces fresh oyster mushrooms, chopped
- 3 ounces fresh chanterelle mushrooms, chopped
- 2 tomatoes, peeled, seeded, and chopped
- 1 tablespoon Creole seasoning
- 1/2 cup cognac
- 1/2 cup shrimp stock
- 1/3 cup veal stock
- 1 pound peeled and deveined gulf shrimp
- 2 tablespoons chopped fresh thyme
- 3 tablespoons unsalted butter

How to make it Preheat oven to 350 then combine 4 tablespoons butter and onion in large Dutch oven
- 8 tablespoons butter divided
- 1 white onion thinly sliced
- 1 pound fresh spinach
- 6 salmon filets
- 1/4 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 1-1/2 cups heavy whipping cream
- 1/2 cup vodka
- 2 tablespoons green peppercorns in water drained and crushed
- 3 tablespoons fresh lime juice

Asparagus with Green Herb Hollandaise Sauce

How to make it Trim the asparagus so that they are all the same length
- Green herb Hollandaise Sauce:
- 3/4 lb. green asparagus
- 3/4 lb. white asparagus
- (you can use all green if white isn't available)
- 3 egg yolks
- 1 to 2 Tbl. freshly squeezed lemon juice, or to taste
- 1/4 tsp. coarse salt
- Pinch of fresh ground pepper
- 1 Tbl. chopped fresh flat-leaf parsley
- 1 Tbl. chopped fresh dill
- 1/4 lb. (1 stick) unsalted butter, melted until foamy
Sauced-Up Asparagus or Green Beans

How to make it Wash, trim and cut fresh green beans (or asparagus) into desired size

- 2 tablespoons finely diced onion
