Ingredients
- 6 slices cooked bacon, crumbled
- 2 Tablespoons bacon fat
- 2-3 lbs. boneless lamb, cut into 1-2 inch cubes
- 14 oz Guinness Beer
- 1 cup red wine
- 6 cloves minced garlic
- 2 Tablespoons tomato paste
- 1 Tablespoon sugar
- 1 Tablespoon dried Thyme
- 1 Tablespoon Worcestershire Sauce
- 2 large onions, chopped
- 3 carrots coarsely chopped
- 4 stalks celery, chopped
- 3 leeks, chopped (white parts only)
- 1 rutabaga chopped
- 4 Tablespoons cornstarch and water to mix for thickener

Preparation
Step 1
Brown meat in bacon fat, remove
deglaze pan with stock and wine
Add all other ingredients and mix...be sure all is covered with liquid
Cook at 15psi for 17 minutes
Use natural release
Thicken with cornstarch/water slurry
Serve.
