Taco Bake

Directions Heat oven to 400 degrees
- 12 corn tortillas (5 or 6 inch), torn into bite-size pieces
- 2 cans (15 to 16 oz. each) chili beans in sauce, undrained
- 1 10-oz. can enchilada sauce
- 1 1/2 C. Monterey Jack Cheese (6 oz.)
- 3 med. green onions, sliced (1/4 C.)
Grilled Zucchini

Directions Pour Italian-style salad dressing into a resealable plastic bag
- 1 (8 ounce) bottle Italian-style salad dressing
- 2 zucchinis, cut into thick rounds
- salt and ground black pepper to taste
Refried Beans

- 2 cups uncooked pinto beans
- 2 sprigs epazote (if available)
- 1/2 cup bacon drippings or lard
- 1/2 teaspoon garlic powder
- 1 serrano chile, seeded and halved (optional)
- salt to taste
Cranberry Cornmeal Bread

1. Place all ingredients except cranberries in bread machine pan in the order recommended by the manufacturer
- 1 cup water
- 1 tablespoon water
- 3 tablespoons molasses or honey
- 2 tablespoons butter, softened
- 3 cups bread flour
- 1/3 cup cornmeal
- 1 1/2 teaspoons salt
- 2 teaspoons bread machine yeast
- 1/2 cup dried cranberries
Pasta With Hot Italian Sausage

1) place sausage and water into pressure cooker; secure lid
- 1 1/2 lb hot italian sausage in casings
- 1/2 cup water
- 1 lb dry rigatoni pasta
- 3 cups chicken stock
- 3 cups pasta sauce
- 2 cups ricotta cheese
- 2 cups mozzarella cheese shredded
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp black pepper
BBQ Sauce

1. Process onion with the water in a food processor until pureed and the mixture resembles slush, about 30 seconds
- 1 medium onion, peeled and quartered
- 1/4 cup water
- 1 cup ketchup
- 5 tablespoons molasses
- 2 tablespoons cider vinegar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons Dijon mustard
- 1 1/2 teaspoons liquid smoke (optional)
- 1 teaspoon hot pepper sauce, such as Tabasco
- 1/4 teaspoon ground black pepper
- 2 tablespoons vegetable oil
- 1 medium garlic clove, minced or pressed through a garlic press
- (about 1 teaspoon)
- 1 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
Pineapple Pancakes with Coconut Syrup

To prepare the syrup: Combine all syrup ingredients in a sauce pan over high heat
- For the syrup:
- 1 14-ounce can coconut milk
- 1 cup flaked coconut
- 3/4 cup brown sugar
- For the pancakes:
- 2 cups all-purpose flour
- 2 Tablespoons brown sugar
- 1 Tablespoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs - beaten
- 3/4 cup milk
- 1/4 cup butter (or margarine) - melted
- 1 20-ounce can crushed pineapple (don't drain)
Chef Jim's Tartar Sauce

Mix all ingredients together
- 1 cup mayonnaise
- 1/2 cup sour cream
- 3 tablespoons drained capers, crushed
- 3 tablespoons dill pickle relish - or to taste
- 1 minced shallot
- 1 tablespoon dry dill - or to taste
- 2 tablespoons lemon juice - or to taste
- 1/2 teaspoon Worcestershire Sauce
- 1 tablespoon Dijon or Creole mustard
- recipe may be doubled
Zucchini Pie 2

Directions Preheat oven to 350°F
- 3 cups grated zucchini
- 1 small onion, chopped
- 1 cup all-purpose flour
- 1 cup grated provolone cheese
- 3 eggs, beaten
- 1/4 cup vegetable oil
- 4 tablespoons grated Parmesan
- 2 teaspoons chopped fresh basil
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Jim's Mandarin Lettuce Salad for 75

Make up the dressing in a small container
- Dressing:
- 12 heads of Romaine Lettuce, broken up
- 4 lb. bacon; crumbled
- 2 doz Green Onions, chopped
- 12 cans Mandarin Oranges, drained
- 3 cups Oil
- 1-1/2 cups Sugar
- 1-1/2 cups Red Wine Vinegar
- 3/4 teaspoon of Salt
- 3/4 teaspoon of pepper
