Pickled Shrimp

Ingredients
- 6 cups water
- 1 cup vegetable oil
- 2 pounds unpeeled medium-size fresh shrimp
- 1 cup vinegar
- 3/4 cup water
- 1 medium onion, sliced and separated into rings
- 1/4 cup fresh lemon juice
- 2-1/2 teaspoons celery seeds
- 1 (2-1/4-ounce) jar capers,undrained
- 1-1/2 teaspoons salt
- 1 teaspoon sugar
- 3 bay leaves
- Dash of hot sauce

Preparation
Step 1
Bring water to a boil in a large saucepan; add shrimp, and cook 3 to 5 minutes. Drain well; rinse shrimp with cold water. Chill. Peel and devein shrimp.
Place half of shrimp in a large bowl. Cover shrimp with half of onion rings and half of capers. Repeat layers with remaining shrimp, onion rings, and capers. Top with bay leaves.
Combine vegetable oil and remaining ingredients in a large bowl, beating well with a wire whisk. Pour marinade mixture over layered shrimp mixture. Cover tightly, and marinate in refrigerator at least 8 hours.
To serve, drain well, and remove and discard bay leaves.
