Great Pressure Cooker Red Beans

Soak the red beans in water overnight
- 1 pound Camelia red beans
- 1 tablespoon parsley
- 2 tablespoons bacon drippings
- 1 pound ham seasoning (cubes)
- 2 tablespoons olive oil
- 1 piece pickled meat (optional)
- 2 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1 bunch green onions and tops sliced thin
- 1 bay leaf
- 1 medium onion, minced
- 1/2 teaspoon dried Italian seasoning
- 1/2 medium bell pepper, minced
- 1/2 teaspoon lemon pepper
- 4 pieces celery with leaves, minced

How to make it 1.Preheat oven to 350 degrees
- 1 Lb Boneless chicken breasts -Diced into cubes
- 1/8 Teaspoon cumin
- 1/4 Teaspoon Ground Chile de Arbol pepper
- 1/8 Teaspoon Mexican oregano
- 1/4 Teaspoon salt or to taste
- 1/8 Teaspoon white pepper or to taste

Puff Pastry Blueberry Cobbler

Preparation: 1. Thaw pastry according to package directions - 30 to 40 minutes
- 1 sheet frozen puff pastry
- 1 pound blueberries (frozen or fresh, don't thaw frozen berries in advance)
- 1/4 - 1/2 cup sugar (depending on how sweet the berries are)
- 2 tsp. fresh lemon zest
- 1 tsp. ground cardamom
- 1 1/2 Tbsp. instant tapioca, ground* or
- 1 Tbsp. tapioca starch or
- 1 Tbsp. corn starch
- 1 Tbsp. butter, cut into small pieces

Method: Heat olive oil in large skillet and add finely chopped onion
- 2 T olive oil
- 1 onion, or 4 shallots, finely chopped

- 16 shrimp
- 1/4 pound crabmeat or lobster
- 8 fish filets (halibut, redfish, etc.)
- 12 baby potatoes, boiled, peeled, and halved or quartered
- 1/4 t powdered saffron
- 1/4 cup loosely packed cilantro
