Roasted Radishes

1. Preheat the oven to 500°
- 1 . 3 bunches small radishes with greens attached
- 2 . 2 tablespoons extra-virgin olive oil
- 3 . Salt and freshly ground pepper
- 4 . 2 tablespoons unsalted butter
- 5 . 2 tablespoons fresh lemon juice
Jim's Mexican Potatoes

Method: Place potatoes in pot of hot water
- 5 lb. small new potatoes
- oil for deep frying
- Montreal Steak Spice
- bacon fat
- 1 green and 1 red pepper, diced
- 1 onion, chopped
- 4 cloves garlic, sliced thinly
- 1/2 lb. chorizo or Italian sausage (casings removed)
- 1 package Knorr Hollandaise Sauce
- half and half & butter for the Hollandaise sauce
- 2 T chopped cilantro
Pasta with Pesto

Directions Combine the walnuts, garlic, arugula, and cilantro or basil in a food processor or blender
- 1/4 cup chopped walnuts
- 3 cloves garlic, minced
- 2 cups coarsely chopped arugula, stems included
- 1/4 cup coarsely chopped fresh basil
- 1/2 cup olive oil
- 1/3 cup grated Parmesan cheese
- salt to taste
- 1 pinch cayenne pepper
- 1 (16 ounce) package dry pasta
Quebec Tourtierre

Preheat an oven to 400F. Roll the pastry dough into 2 equal-sized circles to fit a 9-inch pie pan
- Pate Brisée or store-bought pastry dough for a double crust
- 1 tablespoon light olive or canola oil
- 1/2 pound ground pork
- 1/2 pound ground beef
- 3/4 cup chopped onion
- 1 clove garlic, crushed and finely chopped
- 1/3 cup shredded carrots
- 1/4 cup finely chopped celery
- 2/3 cup beef stock
- 2 teaspoons Cognac
- 1 teaspoon dried parsley
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried sage
- 1/4 teaspoon dried thyme
- 1/16 teaspoon ground cloves
- 1/16 teaspoon ground cinnamon
- 1/16 teaspoon grated nutmeg
- 1 tablespoon dry bread crumbs
- 1 large russet potato, peeled, boiled and mashed
- NOTE: use spices to taste/smell.
Tortilla Pizza

1. Spread sauce evenly over tortilla, right to the edge 2
- 1 tortilla, regular, multi-grain or low-carb
- 3 T tomato sauce- homemade or bought
- 1/2 c shredded mozzarella cheese
- 1/2 oz crumbled feta cheese
- 4 slices good prosciutto
- 1/4 c (or so) roasted acorn squash, sliced
- 1/4 c (or so) carmelised cippolini onions, sliced thick
- a few dashes of cayenne pepper

- 1 lb. beef cubed into 1 inch pieces
- 1 sm. onion, chopped
