Apple-Cabbage Chicken Casserole

Ingredients
- 1 sm. cabbage, cut in 1 1/2-in. wedges
- 2 tsp. flour
- 1 tsp. caraway seeds
- 4 small tart red apples, cored and cut in 1/2-in. rings
- 2 Tbs. brown sugar
- one 2 to 2 1/2-lb. fryer chicken, cut up into pieces
- 1/2 C. cider vinegar
- 1 Tbs. salt
- 2 Tbs. butter

Step 1
Preheat oven to 350 degrees. Place cabbage evenly around the bottom of a 2-quart casserole dish. Sprinkle with 1 teaspoon flour and caraway seeds. Top with apple rings and sprinkle with a mixture of brown sugar and 1 teaspoon flour. Arrange chicken (skin side up) on top of that. Combine vinegar and salt together, then pour over chicken. Next, melt butter and pour on top. Cover casserole and bake for 45 minutes. Uncover and bake for another 30 minutes, or until chicken is tender and browned.
