Soft No-Roll Sugar Cookies

Directions for Cookies ~ 1
- <3 1 cup granulated Sugar
- <3 1 cup Powdered Sugar
- <3 1 cup Butter or stick Margarine, softened
- <3 3/4 cup Vegetable Oil
- <3 2 TBSP Milk
- <3 1 TBSP Vanilla
- <3 2 Eggs
- <3 4 1/4 cup All-Purpose Flour
- <3 1 tsp Baking Soda

Pineapple Pudding Cake (Best cake I ever made.)

This is my favorite cake of all time
- 1 yellow cake mix (I always use Duncan Hines) (Don't use any odd flavored cake mixes for this, would be too much, and I believe Angle food cake mix would be to weak)
- Ingredients to make cake mix (eggs, oil, etc.)
- 3 packages (3.4 ounces each) instant vanilla pudding mix (when I make a large cake I use three large vanilla pudding mixes with one cup less milk. and 1/2 cup to warm the cream cheese)
- 3 1/2 cups cold milk (I warm half a cup of the milk to help soften the cream cheese, mix, then add to the pudding mixture)
- 8 ounces cream cheese, softened (two for a large batch)
- 20 ounces crushed pineapple, drain and reserve juice for cake (two for a large batch)
- 1 large container cool whip thawed (2 for a large version)
Pumpkin Crumb Coffee Cake

1) Preheat oven to 180C (350F)
- Cake:
- 250 g (2 cups) flour
- 2 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp ginger
- 225 g (1 cup) white sugar
- 84 g (3/4 stick) butter, softened
- 2 eggs
- 425 g (15 ounces) pumpkin puree
- Crumb topping:
- 56 g (1/2 stick) butter, cold
- 70 g (1/4 cup + 1 tbsp) white sugar
- 1 tsp cinnamon
- 93 g (3/4 cup) flour
Chicken in White Wine Sauce with Mushrooms

Add the butter and a tbsp olive oil to a large skillet and melt over medium high heat
- 2 tbsp butter
- 1 tbsp olive oil
- 1 lb chicken breasts boneless and skinless cut in half lengthwise
- salt and pepper to taste
- 1 medium onion chopped
- 3 cloves garlic minced
- 12 oz white mushrooms sliced, 340 g
- 1 tbsp all-purpose flour
- 1/4 cup dry white wine
- 1 1/2 cups half and half
- Fresh chopped parsley for garnish
Cream Cheese Bean Dip

Remember when you are making a recipe for company do not make it spicy hot
- 1 cup sour cream
- 1 - 16 oz. can refried beans
- 4 oz. (1/2 bar) cream cheese (softened)
- 2 Tbsp favorite salsa
- 1 8oz pkg Monterey Jack cheese
- 1 package taco seasoning
- 1 cup Mexican cheese
- Salsa (a few TB - 1/4 cup of your favorite kind) - optional

French Onion Meatballs & Smashed Cauliflower

You could use regular mashed potatoes
- 1 lb. ground beef
- 1/2 cup finely chopped onions
- 1/2 cup panko bread crumbs (could use gluten free bread crumbs here)
- 1 egg
- 2 cloves garlic minced
- 1 tablespoon dried parsley
- 1/2 head cauliflower
- 1 can French onion soup (10.5 ounce) (check for gluten free)
- 1 tablespoon Worcestershire Sauce
- 1/2 cup low sodium chicken broth (gluten free if needed)
- 1 tablespoon butter
- 1 tablespoon flour (can use cornstarch)
- 4 slices white American cheese
- 1/2 cup shredded provolone or provel ropes
- Salt & Pepper to taste

This recipe is a grain free take on a classic, and much loved recipe
- cake:
- 3/4 cup coconut flour, sifted
- 1 cup melted virgin coconut oil
- 10 omega 3 eggs
- 5 large carrots, peeled and shredded
- 1 cup pure maple syrup (reserve 1 tablespoon for date mixture)
- 1 tablespoon cinnamon
- 1 tablespoon pure vanilla extract
- 1 teaspoon sea salt
- 1 teaspoon baking soda
- 10 medjool dates
- Chopped raw walnuts for garnish
- Cream Cheese Frosting:
- 16 oz full fat cream cheese
- 1/2 cup maple syrup
- 1 tablespoon vanilla extract
