Simple Stuffed Mushrooms

- DRESSING:
- 1/2 cup mayonnaise
- 1/3 cup granulated sugar
- 1/4 cup milk
- 1/4 cup buttermilk (not necessary, but good to have) (could add more milk or half and half)
- 2 1/2 tablespoons lemon juice
- 1 1/2 tablespoons white vinegar (for gluten free do not use malt vinegar)
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- SLAW:
- 1 head of cabbage
- 1 medium carrot (about 1/4 cup) grated
- 2 tablespoons minced onion

Lois' Potato Salad

This is the recipe I learned from Mama
- 5 pds Yukon Gold, or Red Potatoes, mostly peeled and washed, diced in
- half inch squares, pieces should be relatively
- the same.
- 1 cup Mayo
- 1 tbs Salt (for boiling the potatoes)
- 1 tbs Salt (for the mixture)
- 2 tbs Vinegar or pickle juice
- 1 tsp sugar (if you use Vinegar)
- 3/4 cup chopped sweet gherkin pickles or Salad Cubes which is better.
- 1 cup finely chopped Celery (I always use the most tender stalks, not the very outside which are tougher. Use those for soup or other cooked recipes)
- 4 stalks of Scallions, the white part, sliced thin (family doesn't like onions so I sneak them in this way)
- 2 tbs Celery seed
- 2 tbs yellow Mustard
- 1 tsp pepper
- Hint: Use 1/3 cup of warm water to loosen salad a little, if you wish. That way you are not adding more and more mayo.

- 1 6-ounce piece day-old French Bread, cut into 8 pieces (about 1/3 a loaf of bread)
- 1 cup whole milk
- 1 3/4 pounds ground beef (7 to 15% fat)
- 2 large eggs, lightly beaten
- 1 medium onion, finely chopped
- 1/2 cup chopped parsley
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried thyme
- all purpose flour
- 2 tablespoons butter
- 1 1/2 teaspoons olive oil
- 1 1/2 cups red wine
- 1/4 cup tomato paste
- 2 1/2 cups canned beef broth
- Mashed Potatoes
- 1 bag of baby spinach
- 4 pounds Yukon Gold potatoes, peeled and cut into 2-inch pieces
- 1 stick butter
- 1 1/4 cups warm whole milk or more
- 2 cups grated Gruyère cheese
