Oven Roasted Smoked Sausage and Potatoes

Preheat the oven to 400 degrees
- 1 package of smoked sausage, sliced into rounds
- 1 large onion, peeled and chopped
- 5 large potatoes, peeled and chopped into 1/2 inch cubes
- olive oil
- fine sea salt
- freshly ground black pepper
- sweet paprika
- dried thyme
- 1 cup of grated sharp cheddar cheese

Directions: For the cake: Position an oven rack in the middle of the oven; preheat to 350 degrees

- 1 pork tenderloin - 1lb |16 oz| 450g
- 4 tablespoons olive oil
- 1 pear, unpeeled, sliced lengthwise into 1/2 inch thick pieces
- 1 apple, unpeeled, sliced lengthwise into 1/2 inch thick pieces
- 1 cup sweet potato sliced into 1 inch by 1/2 inch pieces
- Or you could use just potatoes and carrots pealed and diced. or buy a bag of those little yellow potatoes, yum (wash them)
- 3 cups or so of gluten free beef stock
- Salt & pepper

- 4 boneless, skinless chicken breasts, cut in half
- 12 slices of thin sliced ham
- 1 1/2 cups swiss cheese, shredded
- 3 Tbsp. butter, melted
- 1 cup of Ritz crackers, crushed (Leave out to make gluten free)
- 3 Tbsp. grated parmesan cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- Chicken Cordon Bleu Casserole
- FOR THE SAUCE. . .
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 cup milk
- 1/2 cup chicken broth
- 1/2 Tbsp. Dijon mustard
- 1 tsp. Worcestershire sauce
- Note: You could heat the butter and milk then add arrowroot or corn starch to thicken instead of flour to make this recipe gluten free.
