Thanksgiving Meatballs with Cranberry Sauce (Paleo)

MEATBALLS: Preheat oven to 425F
- MEATBALLS:
- 2 lb ground pork
- 2 teaspoons butter, bacon fat, or coconut oil
- 1/4 cup onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup carrot, grated or shredded
- 1/4 cup chestnuts, finely chopped (use walnuts or pecans if chestnuts are not available)
- tablespoons Italian Sausage Spice Blend:
- 1 teaspoon sea salt
- 1 tablespoon fennel seeds, ground
- 1 tablespoon ground sage
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/4 teaspoon white pepper
- (or 1 teaspoon black pepper)
- 2 teaspoons dried parsley (optional)
- Use 2 tablespoons of spice blend per pound of meat to make sausage.
- CRANBERRY SAUCE:
- 15-16 ounces fresh cranberries
- Organic honey or maple syrup to taste (about 1-4 tablespoons)
- Juice + zest of one orange

Turkey Stuffed Sweet Potatoes

- 2 sweet potatoes or yam, holes poked throughout with a fork
- 2 garlic cloves, minced
- 1/2 yellow onion, diced
- 1/2 pound ground turkey (or more, if you would like)
- 2 tablespoons hot sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 5-6 cups fresh spinach
- salt and pepper, to taste
Orange Salmon with Broccoli and Red Pepper (Paleo)

Turn your oven onto Broil
- 4 salmon fillets (skinless or skin on – doesn’t matter)
- 1 head of broccoli, cut into florets
- 2 clementines, cut into segments and zested (you could also use 1 orange)
- 1/2 red pepper, cut into strips
- 1/2 red onion, cut into 1/4 inch half moon shaped slices
- 2-3 T toasted sesame, sesame or olive oil
- salt and pepper
- splash of wheat free soy sauce – Coconut Aminos or Tamari (if you use Tamari, make sure it has the Non-GMO Project Certified Seal)
- Optional Toppings: toasted sesame seeds, freshly grated ginger, green onions, cilantro, additional coconut aminos or tamari
Paleo Cranberry Apple Pear Crisp

This Paleo Cranberry Apple Pear Crisp is great for the holidays or any chilly day of the year
- FILLING:
- 2 cups fresh cranberries
- 2 cups Honeycrisp apples, peeled, cored, and chopped
- 2 cups Bartlett pears, peeled, cored, and chopped
- 6 tablespoon grass-fed butter, or ghee
- 1 tablespoon cinnamon
- 1/2 teaspoon liquid stevia (omit if you want a more tart taste)
- CRUMBLE:
- 1 cup unsweetened shredded coconut flakes
- 2 tablespoons grass-fed butter, or ghee melted

Chicken Florentine Spaghetti Squash Boats

First things first, let’s get that spaghetti squash in the oven to roast while we prepare the filling
- 1 medium to large spaghetti squash
- 16 ounces (454 grams) chicken Italian sausage (organic, gluten-free)
- 1 organic white or yellow onion, diced
- 2 –3 cloves garlic, minced
- 3 cups (700 grams) organic baby spinach leaves, packed into measuring cup
- 2 –3 tablespoons (30–45 mL) extra virgin olive oil
