Pumpkin Gingerbread Cupcakes (paleo)

Preheat oven to 350 Mix all the cake ingredients in a large bowl making sure all is combines well Pour batter int
- 1 cup punkin puree
- 1 cup almond butter
- 1 TBS pure maple syrup
- 2 TBS honey
- 2 eggs
- 1 1/2 TSP baking powder
- 1/2 TSP baking soda
- 1 TSP vanilla extract
- 1 TSP cinnamon
- 1 TSP ground ginger
- 1/4 TSP nutmeg
- 1/4 TSP cloves
- 1/4 TSP cardomom
- 1 TSP lemon juice
Pumpkin Pie Spice Blend

Mix all ingredients thoroughly and store in an airtight container with a secure lid
- 2 tablespoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground allspice
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- 2 pinches ground cardamom
Chicken Cacciatore

Slice onions and put in the bottom of the crock pot
- 2 Onions
- 16 ounce jar of BPA-free Diced Tomatoes
- 4 Boneless Chicken Breasts
- 1/4 cup Coconut Oil
- 1 package of button Mushrooms
- 1 large head of Cabbage
- 1 jar ofTomato Paste-6 oz
- 1 teaspoon (or more to taste) of: Basil, Thyme, Garlic, Rosemary, Oregano, Salt and Pepper.
Lamb Roast

1. Combine lemon zest, oregano, garlic, salt and pepper
- 4-5 pound Leg of Lamb (boneless or bone in)
- Zest of 2 Lemons (about 2 Tbsp)
- 1/4 cup Finely Chopped Fresh Oregano (measured after chopping; or use 3 Tbsp Dried Oregano)
- 5-6 cloves Fresh Garlic, crushed
- 1 1/2 tsp Salt
- 1/2 tsp cracked Pepper
Cabbage and Green Apple Coleslaw

Toss the cabbage, apple, celery, and bell pepper together in a large bowl
- 1/2 small red or green cabbage, chopped
- 1 tart apple (Granny Smith recommended), grated or chopped
- 1 large stalk celery, chopped
- 1 medium bell pepper (any color), chopped
- 1/4 cup olive oil
- juice of 1 lemon
- 2 Tbs raw honey
- 1 tsp celery seed
- dash sea salt
Chocolate Chip Pumpkin Cookies

1. Preheat oven to 350 2
- 1 cup almond flour
- 1 tbsp coconut flour
- 1 egg
- 1 tbsp coconut oil (or grass-fed butter)
- 1/4 cup pumpkin puree
- 3 tbsp raw organic honey
- 1 tsp organic vanilla extract
- 1/8 tsp Himalayan sea salt
- 1/4 tsp baking soda
- 1/4 tsp pumpkin spice (more to taste)
- 1/4 cup or more chocolate chips (Enjoy Life’s or your favorite dark chocolate chunks)
- Optional: additional pumpkin pie spice sprinkled over cookies when cooled (I recommend!)
Sea Salted Dark Chocolate Almond Cups

- 1 cup dark chocolate (72% or higher)
- 1/3 cup raw almond butter (homemade or store-bought)
- 1 tbsp raw organic honey
- 1/2 tsp organic vanilla extract
- 1 tsp Himalayan sea salt flakes (for topping)
Pumpkin Smoothie

Plug in your blender and blend all ingredients together until you get a smooth smoothie
- 1/2 cup pure organic pumpkin
- 1 cup unsweetened almond milk
- 1/2 frozen banana
- 1/2 tablespoons maple syrup (or Raw honey)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon (+ a bit extra more to sprinkle on top)
- 1/8 teaspoon ginger
- 1/8 teaspoon nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon allspice
- 1/2 cup (or more…depending on how smoothie-like you like your drink) of ice
Turkey Cabbage Rolls

Place whole cabbage head in boiling pot of water with dash of salt
- One head of cabbage
- One pound of ground turkey (one pound makes 6-8 rolls)
- Cumin
- Cilantro
- Chili powder
- Red pepper flakes
- One can of diced tomatoes in sauce
- One can of mild rotel with green peppers
Pumpkin Cheesecake Cups (Paleo)

Preheat oven to 350 and line a cupcake pan with 12 cupcake liners
- CRUST:
- 1 cup walnuts, crushed
- 3 T coconut oil, melted
- 1 T pure maple syrup
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1/4 tsp salt
- 1/4 tsp baking soda
- CHEESECAKE:
- 1 cup cashews
- 2 T raw honey
- 1/3 cup coconut oil, melted
- 1 T vanilla
- 1 lemon + water to equal 1/2 cup total
- 1/2 tsp pumpkin spice
- pinch salt
- PUMPKIN PIE:
- 1 cup pumpkin
- 1 1/2 tsp pumpkin spice
- 1 egg
- 1-2 T honey
