Preparations (Can be done the evening before and stored in the fridge over night
- 2-3.5 lb (1-1.5 kg) Beef Shank.
- 6 large Carrots.
- 4 large Parsnips.
- 15 Champignon Mushrooms.
- 2 Onions.
- 5 cloves of Garlic.
- 3 tbsp Dijon Mustard.
- 4 tbsp Tomato Paste.
- 4 Bay Leaves.
- 1 tbsp dried Thyme.
- 1 tbsp dried Rosemary.
- 10-15 assorted peppercorns.
Avocado Wraps

Slice avocado in half and remove pit
- 1 large, ripe avocado
- 3 slices Prosciutto
- Lemon juice
- Black pepper
- Chili powder
Italian Sausage Seasoning

Mix together
- 4 tsp Dried Parsley
- 1 Tbs Dried Italian Herbs
- 2 tsp Ground Black Pepper
- 2 tsp Granulated Garlic
- 2 tsp Paprika
- 4 tsp Salt
- 1 tsp Crushed Red Pepper Flakes
- 1 1/2 tsp Fennel Seed
Cranberry Quinoa Salad

cook the quinoa and add everything else
- 2 cups vegetable broth/stock
- 2 cups quinoa
- 1 small finely chopped onion
- 5 finely chopped celery sticks
- 1/2 cup craisins
- 1/2 cup chipped walnuts
- ground white pepper
Blueberry Muffins (Paleo)

1. Preheat oven to 350 degrees F
- 1/2 cup coconut flour, sifted
- 1/2 tsp salt
- 1/4 tsp baking soda
- 6 eggs
- 1/2 cup melted coconut oil (warm, but not piping hot)
- 1/4 cup pure maple syrup
- 1/4 cup unsweetened plain almond milk
- 2 tsp pure vanilla extract
- 1 cup frozen blueberries
- coconut oil for greasing or silicone muffin liners
Pork and Pumpkin Chili

Place your pork in the crockpot and season with salt and pepper
- 3 lbs pork roast
- 2 onions, diced
- 2 14.5 oz cans fire roasted diced tomatoes
- 7 oz can diced green chilies
- 2 chipotle peppers in adobo sauce, chopped (you can find these in the International aisle of your supermarket, usually next to the cans of diced green chilies)
- 1 heaping T adobo sauce
- 4 cloves garlic, minced
- 1/4 cup cilantro
- 2 cups free-range chicken stock
- salt and pepper
- 1/4 cup chili powder
- 2 T cumin
- 1 T smoked paprika
- 2 tsp cinnamon
- 2 tsp cocoa powder
- 2 cups roasted pumpkin or squash or you can use 1 can of pumpkin
- 1 bunch kale or mustard greens, roughly chopped
- Optional Toppings: avocado, additional cilantro, a sprinkling of chipotle chili powder
Thanksgiving Pumpkin Cheesecake

CRUST: Add walnuts to your food processor and blend until you get a meal, almost a walnut butter
- CRUST:
- 1 cup almond butter
- 1 cup unsweetened shredded coconut
- 2/3 cup walnuts
- 1 heaping tablespoon Coconut Cream Concentrate or homemade coconut butter
- 1 heaping tablespoon raw honey
- pinch of salt
- FILLING:
- 1.5 cups roasted, unsalted cashews
- 1/2 cup coconut oil
- 1/2 cup raw honey
- 2-3 tablespoon lemon juice
- 5-6 tablespoons canned coconut milk
- 1 teaspoon vanilla extract
- TOPPING:
- 1/2 cup pumpkin puree
- 2 tablespoons coconut milk
- 1 tablespoon raw honey
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground ginger
- 1/8 teaspoon ground cloves

- 1 3/4 cup (168 grams) blanched almond flour
- 1/4 cup unsweetened cocoa powder, sifted
- 3 tablespoons coconut sugar

- 1/2 teaspoon sea salt
- 1 large egg yolk
