Almond Butter Bars

In a medium bowl, stir together the almond butter, butter, almond flour and sugar until it is completely combined
- 1/2 cup almond butter
- 1/2 cup clarified butter or coconut oil
- 1 1/4 cup blanched almond flour
- 1 1/4 cup organic coconut sugar
- 1 1/2 cup dark chocolate chips
- 2 tablespoons almond butter
Loaded Paleo Nachos

For the crockpot chicken: Place your chicken in the crockpot
- For the crockpot chicken:
- Loaded Mexican Nachos – Paleo Style
- 2-3 chicken breasts, fresh or frozen
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- salt and pepper, to taste
- 1 T fresh cilantro,
- 1 cup chicken stock or broth
- For the nachos:
- Peppers (a mix of red, yellow and orange bell peppers, but you can use poblanos, jalapenos, banana peppers, or a mix etc.)
- Toppings:
- 1-2 tomatoes, diced
- 4 green onions, chopped
- 1-2 avocados, diced
- 1 -2 cups romaine lettuce
- 1/4 cup fresh cilantro
- black olives, sliced
- jalapenos, sliced
Salted Caramel Sauce (Paleo)

Instructions Simmer the apple juice in a sauce pan until the consistency of runny honey, about 30 minutes
- 4 cups freshly pressed apple juice (see note)

- 1-2 tablespoons organic virgin coconut oil (for frying)
- Sea salt, organic black peppercorn
Summer Squash Wedges

Cover your baking sheet with aluminum foil
- 1 summer squash
- 1 tablespoon of olive oil
- Sea salt to taste (I used about 1/4 teaspoon)
- Freshly Ground black pepper to taste (I used about 1/4 teaspoon)
- Paprika to taste (I used about 1/4 teaspoon)
Mini Pumpkin Power Cookies (Paleo)

Preheat the oven to 350 degrees F
- 1/2 cup coconut sugar
- 1/3 cup virgin coconut oil
- 1/3 cup pure pumpkin puree (make sure it’s well drained)
- 1 teaspoon vanilla extract
- 1 1/2 cups (144 grams) blanched almond flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon sea salt
- 2 tablespoons raw cacao nibs (or 1/2-ounce unsweetened chocolate, finely chopped)
- 2 tablespoons raisins or dried currants
- 2 tablespoons raw pumpkin seeds
Carrot Cake Bites

In a food processor fitted with the S-blade, process carrots until finely ground
- 2 medium carrots, peeled and roughly chopped (about 3/4 cup)
- 1/2 cup raw walnuts
- 1/4 cup raw cashews
- 3/4 cup dates, pitted and roughly chopped (about 5-6 large dates)
- 1 tsp. freshly grated ginger
- 1/2 tsp. cinnamon
- Zest of one orange, optional
- Sesame seeds or unsweetened shredded coconut, for rolling
Pumpkin Spiced Almond Butter

Add ingredients to a food processor and process until desired consistency is reached
- 1 cup of almond butter
- 2-3 tablespoons pure maple syrup (I use 2 tablespoons, but if you want it sweeter add 3)
- 2 tablespoons of roasted pumpkin or canned pumpkin (add more, 1 tablespoon at a time to the food processor if you want a creamier consistency)
- 1 tablespoon pumpkin pie spice
- 1 teaspoon pure vanilla extract
- sea salt, to taste

Preheat oven to 375 degrees
- 1/2 cup coconut flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 5 eggs
- 1/2 cup canned coconut milk (full fat)
- 1 1/2 cups organic pumpkin puree
- 3 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup organic dark chocolate chips
- 1/4 cup chopped walnuts (for topping)
- 1/8 cup pumpkin seeds (for topping)
- Coconut oil spray (to grease brad pan)
Pumpkin Pie [AIP]

Combine all of the filling ingredients, cold in a pot
- 3 cups pureed pumpkin
- 1/4 cup water
- 1/4 cup oil
- 1 tsp vanilla
- 2 1/2 tablespoons gelatin
- 1 1/2 tablespoons cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon sea salt
