Middle Eastern Shish Tawook - Paleo Recipe Sharing Site

1. In your blender or food processor, purée the tomatoes, onion, garlic, lemon, vinegar, salt, pepper and spices
- 2 ripe medium tomatoes, quartered
- 1 medium onion, quartered
- 2 large cloves of garlic
- Juice of one lemon
- 2 tbs light vinegar of choice
- 1/2 tsp salt
- 1 tsp fresh cracked black pepper
- 1 tsp dried thyme
- 1/2 tsp sweet paprika
- 1/4 tsp dried mint
- 1/4 tsp cumin
- A pinch of cinnamon
- 500 g or 1/2 a pound of boneless chicken thighs, cut into bite-size pieces
- 1 small bell pepper, cut into bite-size pieces
- 1 small onion, cut into bite-size pieces
- 1/2 tbs of olive oil, coconut oil, or ghee,
- Chopped parsley, for garnish
Almond Butter Health Bars

In a large bowl, mix the almond butter, honey, cocoa powder, cinnamon, and salt to combine
- 1 cup creamy raw almond butter
- scant 1/3 cup honey
- 1 tablespoon unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup unsweetened shredded coconut
- 1/3 cup (packed) pitted Medjool dates, chopped (about 5 dates)
- 1/4 cup raw sunflower seeds
- 1/3 – 1/2 cup raw sesame seeds, for rolling
Cashew Cheese and Pomegranate Filled Acorn Squash

Place raw cashews in a jar or glass and cover with water
- 1 cup raw cashews
- 1 acorn squash, cut in half
- 1/4 cup water
- 1 teaspoon lemon juice
- 1/8 teaspoon garlic powder
- 2 tablespoons nutritional yeast flakes (optional – tastes great still w/o it)
- salt and pepper, to taste
- 1/2 cup pomegranate seeds

- Paleo Crust
- 3 cups walnuts
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3 tablespoons Earth’s Best Vegan Butter Substitute
- 2 cups raw cashews
- 2 cups unsweetened coconut milk (from a carton)
- 1/2 cup 100% pure maple syrup (You may want to add this in increments depending on how sweet you’d like your ice cream)

- 2 tsp. Italian seasoning;
- 2 garlic cloves, minced;
- Sea salt and freshly ground black pepper;
Summer Squash Pancakes

Shred all vegetables. I used the shredding attachment on my food processor
- 1 small zucchini, shredded
- 1 small yellow squash, shredded
- 1 small carrot, shredded
- 1/2 yellow onion, shredded
- 1 cup almond flour/meal
- 2 eggs
- 2 garlic cloves, minced
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- salt and pepper, to taste
- 2 tablespoons fat of choice (I used duck fat)

1. Preheat the oven to 350 F and line a baking sheet with parchment paper
- 1 heaping cup unsweetened coconut flakes
- 2/3 cup blanched almond flour
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup maple syrup
- 3 Tbsp almond butter
- 1 1/2 tsp vanilla
- 2 Tbsp coconut oil, melted
- 2/3 cup dark chocolate chips or chunks
- 1/3 cup dried, tart cherries 1/3 cup raw pecans, coarsely chopped
