  • 1/4 cup stone ground mustard
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp sea salt
  • 2 tsp black pepper
  • 2 tbsp ghee (or other stable cooking fat of choice)
  • For the Sauté:
  • 1 medium onion, sliced ( I used yellow, but white or red would be fine)
  • 2 heads of fennel, cored and sliced
  • 2 granny smith apples, cored and sliced (I leave the skin on because I enjoy the texture, but feel free to peel them if you like)
  • 1 head of radicchio, cored and shredded
  • 3 cloves of garlic, minced
  • 2 inch knob of fresh ginger, minced
  • 1 tbsp fresh thyme
  • 3 tbsp raw apple cider vinegar
  • 3 tbsp raw honey
  • sea salt and pepper to taste
  • 1 tbsp ghee (or stable cooking fat of choice)
