Homemade Almond Milk

Soak the almonds in water
- 1 Cup of almonds
- 2-3 Cups of water. Depends on how creamy you want your almond milk to be.
- 1/2 tbsp of vanilla. Avoid the artificial variety.
Beef And Okra Stew

First, add the onion, garlic, and chili to a food processor and blend until you have a paste
- 1/2 lb. beef ground beef
- 1/2 lb. fresh or frozen okra (cut crosswise with stems removed)
- 1 large onion
- 3 tomatoes, chopped
- 4-6 fresh garlic cloves
- 2 chilies
- 1 cup water
- 1/2 tsp. cayenne pepper
- 1/4 tsp. cumin
- 1/4 tsp. black pepper
- 1 tsp. salt
Cinnamon Beef Stew

1. Sprinkle the beef generously with salt and pepper
- 2-3 pounds beef stew meat, cut into 1-inch cubes
- salt and black pepper, to taste
- 3 tablespoons coconut oil
- 1 medium carrot, peeled and finely chopped (about 1/4 cup)
- 1 medium onion, diced (about 1 cup)
- 1 medium celery stalk, finely chopped (about 1/4 cup)
- 2 cloves garlic, minced (about 2 teaspoons)
- 2 tablespoons tomato paste
- 1/2 cup beef broth
- 2 tablespoons balsamic vinegar
- 3-5 cups water
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 2 bay leaves
- 1 sprig fresh rosemary (or 1/2 teaspoon dried)
- 1 sprig fresh thyme (or 1/2 teaspoon dried)
- 1 sprig fresh sage (or 1/2 teaspoon dried)
- 2 cinnamon sticks
- extra-virgin olive oil, for garnish (optional)

- For the Brine:
- 6 cups of hot water
- 1/4 cup fine sea salt
- 1 tbsp peppercorns
- 1 bay leaf
- 1/4 cup raw apple cider vinegar
- For the Pork:
- 2-3 lbs pork tenderloin (they usually come in packs of 2, about 1 to 1 1/2 lbs each).
- 1/4 cup stone ground mustard
- 2 tbsp fresh thyme, chopped
- 1 tbsp sea salt
- 2 tsp black pepper
- 2 tbsp ghee (or other stable cooking fat of choice)
- For the Sauté:
- 1 medium onion, sliced ( I used yellow, but white or red would be fine)
- 2 heads of fennel, cored and sliced
- 2 granny smith apples, cored and sliced (I leave the skin on because I enjoy the texture, but feel free to peel them if you like)
- 1 head of radicchio, cored and shredded
- 3 cloves of garlic, minced
- 2 inch knob of fresh ginger, minced
- 1 tbsp fresh thyme
- 3 tbsp raw apple cider vinegar
- 3 tbsp raw honey

- 2 tablespoons fresh lemon juice
