Southwestern Sweet Potato Skins

Preheat the oven to 400 degrees F
- 4 medium sweet potatoes, scrubbed
- 2 tablespoons extra-virgin olive oil, divided use
- Sea salt, to taste
- 1/2 cup finely chopped green cabbage
- 1/2 cup finely chopped red bell pepper
- 1/2 cup finely chopped scallions (green onions)
- 1 small jalapeno pepper, seeded and finely chopped (optional)
- 2 garlic cloves, finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/4 cup mild salsa or tomato sauce
- Chopped parsley, for garnish
Chicken and Bacon Poppers

Cut the top off of the jalapeño peppers
- 1 lb (or more) chicken breast or chicken cutlets
- 1 package bacon (I prefer the U.S. Wellness variety)
- 8-12 jalapeño peppers
Sausage Stuffed Apples

Preheat the oven to 375. Brown the sausage in a large skillet until completely cooked
- 4-6 apples (or 1 per person you are serving)
- 1 lb sausage (ground italian or breakfast sage, nitrate free)
- 1 red onion, finely diced
- 2 tablespoons honey or maple syrup
- 1 large rib of celery, finely diced
- spices to taste, I used 1 tsp each of rosemary, thyme, sage, garlic powder, salt and pepper

- 1 Tbsp Organic Coconut Oil
Tossed Beet and Apple Salad

Wash and remove any dirt on the beets
- Salad
- 6 medium red beets
- 2 tart green apples, chopped
- 1 small red onion, chopped
- 1/3 cup scallions, chopped
- Dressing
- 4 tablespoons coconut oil, melted
- 2 tablespoons fresh dill
- 1 shallot, minced
- 1 1/2 teaspoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon horseradish
- 1/4 teaspoon celery seed
- Salt and pepper to taste
Almond Christmas Cookies

- 3 cups almond flour
- 1/4 cup coconut flour
- 1/3 cup coconut oil, melted
- 1 Tbsp organic vanilla extract
- 1 tsp almond Extract

- 3/4 cup canned pumpkin
- 3 eggs, 1/2 tsp cinnamon
- 1/2 tsp melted coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1 tsp baking soda
- pinch of sea salt
- 2 tsp warm almond butter
- 1 1/2 tsp pumpkin pie spice, 1/4cup honey
Pork Chops + Apples

Preheat oven to 350. Melt butter in baking dish and place pork chops in

- 2 (or more) apples, peeled and sliced into thin slices

Sweet Potato Cottage Pie

- 1 1/2 pounds ground lamb;
- 2 large sweet potatoes;
- 2 medium sticks celery;
- 2 medium carrots;
- 1 medium onion;
- 3 medium garlic cloves, minced;
- 14 oz can, whole, peeled tomatoes;
- 2 tbsp fresh oregano, chopped;
- 1 tsp chili powder;
- 1 tsp ground cinnamon;
- 2 tsp ground cumin;
- 1 tbsp extra-virgin olive oil;
- Sea salt and freshly ground black pepper to taste;
Mashed Acorn Squash

- 2 medium size acorn squash
- 1/4 cup butter or coconut oil
- 2 teaspoons real salt (or other natural salt)
- Other spices (optional) Cinnamon, Nutmeg, and Garlic are good but not needed.
