Chocolate Chip Cookies (Paleo)

Preheat oven to 375℉. Line a baking sheet with parchment paper
- 3 cups almond flour
- 1/2 cup coconut oil, melted
- 1/2 cup raw honey
- 2 large eggs
- 1 tsp baking soda
- 1 tsp sea salt
- 1 tsp vanilla extract
- 1 1/2 cups Enjoy Life Semi-Sweet Chocolate Chips
Apple Hazelnut Wedges (Paleo)

Preheat the oven to 400 degrees F
- 1/2 cup raw hazelnuts
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon sea salt
- 1 large organic apple, such as Gala, Fuji, or Pink Lady
- 1 tablespoon virgin coconut oil, melted
- Coconut milk and Grade B maple syrup, for serving (optional)
Brussels Sprouts and Ground Beef

In a large skillet over medium heat brown the ground beef
- 2 lbs grassfed ground beef
- 1 lb brussels sprouts, sliced
- 1 poblano pepper, chopped
- 1 clove garlic, minced
- coarse ground sea salt, to taste
- cayenne pepper, to taste
- coarse ground black pepper, to taste
Tangy Lemon Avocado Pudding (Paleo)

Makes 3 Servings Directions: Place all ingredients into your food processor and blend until completely smooth
- 1 Tbsp Lemon Zest
- Juice of Two Freshly Squeezed Lemons (or to taste)
- 4-6 Packets Stevia
- 3 Large Avocados
- 2 Tbsp Coconut Oil
Kale with Peanut Sauce

Substitute cashew butter for peanut butter to make a cashew sauce!
- Peanut Sauce:
- 1 large shallot or small onion chopped
- olive oil
- 8 cups chopped kale
- 1/4 cup peanut sauce
- salt and pepper
- 1/4 cup peanut butter
- 1/4 cup hot water
- 1/8 cup rice vinegar
- 1 tbsp wheat free tamari sauce
- 1/2 tbsp agave nectar
- 1/2 tbsp molasses
- 1/2 tbsp chopped cilantro
Spaghetti Squash Casserole (Paleo)

Preheat oven to 375 Bake spaghetti squash for 1 hour In skillet brown turkey and drain excess liquid Chop onion,
- 1 medium spaghetti squash
- 1 pound ground turkey
- 1 zucchini
- 1 onion
- 1 pepper
- 2 medium carrots
- 1 jar marinara sauce
- Oregano, Basil, Pepper, Garlic, Salt, Pepper
- 2-3 cups fresh spinach
- Or leftover meatball or meatloaf
Vegetable Paella

- 1 large leek chopped
- 1 large red bell pepper chopped
- 1 cup chopped mushrooms
- 2 cloves garlic
- 1 cup brown rice
- 3 cups vegetable stock
- 1/3 cup red wine or red wine vinegar
- 2 tbsp chopped parsley
- 1/2 tsp paprika
- 1/4 cup chopped cilantro
- salt and pepper
Moroccan Beef Stew with Lemons and Butternut Squash

Place all of the ingredients except for the butternut and cilantro into your dutch oven
- 3 medium yellow onions, roughly chopped
- 2 lbs (or 1 kilo) beef cut into 1 inch chunks
- 2 T ras el hanout spice
- 1 T sea salt
- 1 t freshly ground black pepper
- 1/3 C unsalted butter
- 3 cloves garlic, crushed
- 2 C beef stock (you can substitute chicken or vegetable stock if you need to, or water.)
- 2 whole, organic lemons (1 of them quartered and thinly sliced, seeds removed)
- 1 medium butternut squash, peeled and seeded, cut into 1 inch chunks
- Optional: greens– I used some beet greens and stems from our garden
- 1 bunch fresh cilantro, roughly chopped
Pumpkin Pancakes (Paleo)

Whisk the eggs, canned pumpkin, and pure vanilla extract together
- 4 eggs
- 1/2 cup pumpkin puree
- 2 tablespoons butter or coconut oil, melted
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- pinch salt
- optional: 1-2 Tbsp of coconut flour
Peppermint Chocolate Macaroons

- 3 cups shredded coconut (I prefer Let’s Do Organic brand for these cookies)
- 1/2 cup cacao powder
- 1/2 cup honey
- 1/2 cup coconut milk
- 1/2 teaspoon peppermint extract
- 1/4 teaspoon vanilla extract
- 1 egg white (or 1/2 cup pumpkin)
- dash of sea salt
