Cookies and Cream Ice Cream

For the cookies melt the coconut oil in a microwave safe dish for 30-60 seconds
- 4 bananas peeled & frozen in chunks
- 1/4 to 3/4 cup coconut or almond milk
- 2 t pure vanilla extract
- 2 T coconut oil melted
- 1 T pure maple syrup
- 2 T unsweetened cocoa powder
- 10 T almond flour
- Dash of salt
Cheesecake Filling (Paleo)

Pulse ingredients in a food processor until mixture is crumbly, be careful not to over process into nut butter
- 1 & 1/2 cups raw macadamia nuts (or cashews)
- 3/4 cup coconut oil (melted)
- 1/3 cup lemon juice
- 1/2 cup maple syrup or honey
- 1 tsp vanilla
- 1 to 4 TBS water, only as needed
AIP Chili

Add all of the ingredients into the slow cooker and give it a good mix
- 2 medium onions – chopped
- 4 cloves of garlic – crushed
- 2 lb ground beef – preferably grass-fed.
- 3 cups bone broth
- 3 large carrots – peeled and diced
- 1/2 medium rutabaga – peeled and diced
- 2 medium beets – peeled and grated
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp cinnamon
- 1/4 tsp allspice (according to The PaleoMom, this is on the “be cautious” category – leave it out if it is a concern)
- Sea salt and freshly ground black pepper to taste
Guacamole with Pomegranate Seeds

Halve and pit avocados, scoop out flesh, then mash together in mixing bowl – leaving slightly chunky Stir in rem
- 4 avocados, mashed
- Seeds from 1 pomegranate
- 2 jalapenos, diced small
- 1/4 cup red onion, diced small
- 1 or 2 cloves of garlic, minced
- 1 to 1-1/2 limes, juiced
- Salt and pepper to taste
- 1/4 cup cilantro (leaves only) chopped
Mexican Rice Bowl

Run florets of cauliflower through a food processor using the shredding attachment, to rice the cauliflower
- 1 head of cauliflower, cut into florets
- 1/3 cup broth or water
- 1 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- handful of fresh cilantro, roughly chopped
- juice of 1 lime
- 1/2 pound pork chorizo
- 1/2 pound ground beef
- 1/2 white onion, diced
- 1 avocado, diced
- salsa of choice
- salt and pepper, to taste
Stuffed Yellow Squash

Preheat the oven to 375 degrees F
- 2 medium yellow squash
- 1 lb. ground beef
- 4 Roma tomatoes, diced
- 1 tsp coconut oil
- 1/2 large yellow onion, diced
- 3 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp ground coriander
- 1 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp fresh parsley, chopped
- Extra virgin olive oil, for drizzling
Stuffed Pumpkins

Instructions Preheat your oven to 425 degrees
- 3 small pumpkin pie pumpkins
- 1 head cauliflower, chopped into florets
- 1 bundle of spinach, stems removed
- 1 lb ground beef
- 1 cup chicken or beef broth
- 1/2 yellow onion, diced
- 1 egg, whisked
- 1 garlic clove, minced
- 2 tablespoons herbes de provence *
- 1 tablespoon garlic powder
- 1 teaspoon thyme
- 1 teaspoon parsley
- salt and pepper, to taste
- 1-2 tablespoons fat (I used olive oil)

- 1/3 cup coconut flour
- 1/4 cup coconut oil, melted
- 1/4 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 whole eggs
- 1/3 cup dark chocolate chips
Turkey-Blueberry Breakfast Muffins

1. In a bowl combine all the ingredients except the coconut oil/ghee/butter
- 1 lb ground turkey (or chicken)
- 1/2 pack of blueberries (about 3/4 Cup)
- 3 Sage leaves – finely chopped
- 3 Thyme sprigs – leaves finely chopped
- 2 shallots (or 1/4 onion) – finely chopped
- 1 tsp minced garlic
- 1 Tbsp of coconut oil or ghee/butter
No Bake Fresh Mint Dark Chocolate Brownies

chop the fresh mint in a food processor then add the pecans and pulse until coarse ground
- 1/2 cup fresh mint (or peppermint extract/oil)
- 1 cup pecans
- 1 1/2 cups medjool dates (13-15 large dates)
- 1 cup almond flour
- 1/2 cup raw cacao powder
- pinch of salt
- 1/4 cup dark chocolate chips
- 3 tablespoons coconut oil, melted
- 2 tablespoons raw cacao powder
- 1 tablespoon raw honey
- 1/2 teaspoons vanilla extract
