Blend and serve
- 2 cup fresh spinach
- 1 green apple, peeled and cored, roughly chopped
- 1/2 avocado
- 1/2 cup coconut milk
- 1 1/2 cups water
- juice of 1/2 lemon
- handful of ice
Recipe: Simple Spiced Spaghetti Squash

Carefully pierce the squash all over with a sharp knife to prevent the squash bursting in the microwave
- 1 large spaghetti squash
- 1 tbsp olive oil
- 1 tsp coriander
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp turmeric
- 1/4 tsp cayenne
- 1 tbsp parsley
Egg Baked in Marinara

1.Set your oven/toaster oven to 400 degrees
- 1 egg
- 2 tbsp tomato sauce (I like mine spicy)
- S&P
- Optional: Drizzle really good olive oil, add fresh herbs like basil and parsley, sprinkle grated parmesan
Daikon Noodles and Broccolini with Asian Pork Meatballs

Preheat the oven to 400 degrees and line a baking sheet with parchment paper
- For the meatballs:
- 1 pound lean ground pork
- 1 teaspoon peeled and minced ginger
- 1/3 cup chopped scallions
- 1 tablespoon soy sauce (or tamari, if you’re gluten free)
- 1 teaspoon finely minced garlic
- 3 teaspoons chopped cilantro
- salt and pepper, to taste
- For the soup:
- 1 teaspoon sesame oil
- 1 tablespoon peeled and minced ginger
- 2 bunches broccolini, halved (make sure to cut off any rough ends on the stems)
- pepper, to taste
- 4 cups chicken broth
- 2 cups water
- 1 tablespoon soy sauce (or tamari, if you’re gluten free)
- 1 tablespoon fish sauce
- 2 teaspoons chili sauce or sriracha
- 3 medium daikon radishes, peeled, Blade C, noodles trimmed
- 1/2 cup cilantro leaves
Almond Flour Cutout Cookies

In a medium sized bowl, combine dry ingredients; mix together well
- 2 cups fine ground blanched almond flour (such as Honeyville, not Bob's Redmill it's too coarse ground)
- Scant less than 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 3 tablespoons coconut oil, softened or liquid (*see alternative fat subs below)
- 1/4 cup honey (or vegan liquid alternative such as agave/coconut sugar)*
- 1-2 tablespoons thick applesauce** (depending on how watery your apple sauce is)
- 1 tablespoon gluten free vanilla extract
