Tomato-less Marinara Sauce

Prepare the first 5 ingredients as stated above (chopping, mincing, etc…), set the garlic and onions aside
- Special equipment:
- 1 1/2 1 1/2 1" 2 (8oz/225g) 1" cubed carrots (about 2 medium)
- 3 3 1" 1 1/2 peeled, 1" cubed Butternut squash (from a 1 1/2 lb/680g squash)
- 1 1/2 1 1/2 1" cup (8oz/225g) peeled, 1" cubed red beets
- 5-6 5-6 5-6 garlic cloves, minced
- 1 1/2 1 1/2 1/2 cups (9oz/250g) diced yellow onion (1 medium)
- 3 3 3 TBLS Ghee or other fat for frying
- 1 1 1 cup (250ml) water
- 1 1 1 cup (250ml) Merlot or Cabernet wine*
- 2 2 2 tablespoons coconut vinegar, ACV (or anyother vinegar)
- 1/4 1/4 1/4 cup (60ml) lemon juice
- 1 1/2 to 2 1 1/2 to 2 to 2 tablespoons dried Italian seasoning herbs**
- 2 2 to teaspoons sea salt, or to taste
- 1 1 to teaspoon fresh cracked pepper, or more to taste
- to 1/2 to 1/2 cup of water/wine to desired consistency
- 1/4 Italian seasoning with a mix of 1/4 cup finely chopped fresh herbs such as: Basil rosemary, oregano & thyme.
- For results that are most representative of this recipe , I recommend making it by the weights listed.

- 1/2 cup almonds, toasted
- 1/4 cup unsweetened shredded coconut (toasted at 350° for 6-8 minutes)
Honey Walnut Apple Crisp

Preheat oven to 400. Place chopped apples in 9×13 inch baking dish
- 6-8 c. chopped apples (I like Gala, but any kind would work)
- 2 1/2 t. cinnamon
- 1/4 t. ginger
- 1/8 t. nutmeg
- 1/8 t. cloves
- 1/4 t. kosher salt
- 1/2 c. honey, divided
- 1/4 c. coconut oil, in solid state
- 1 c. finely chopped walnuts
Shredded Brussels Sprouts with Crispy Shallots

PREP: Clean Brussels and shred
- 1 large shallot, thinly sliced
- 1/4 cup high heat cooking oil
- Pinch kosher salt
- 1 tablespoon organic butter
- 1 1/4 pounds Brussels sprouts, shredded
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Pinch crushed red pepper flakes
- 2 ounces white wine
- Pinch freshly grated nutmeg
Pork Chops with Sweet-and-Sour Cabbage

Melt the butter in a dutch oven over medium heat
- 2 tablespoons unsalted butter
- 3 medium-sized, tart apples, cored, peeled, and sliced into wedges
- 1 head of green cabbage, cored and sliced thin
- 1 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup low-sodium chicken broth
- 1/4 cup apple cider vinegar
- 2 tablespoons sugar
- 1/4 cup flour
- 2 tablespoons olive oil
Spaghetti and Meatball Bites

Preheat oven to 425 degrees
- 1 medium spaghetti squash, cut in half lengthwise, seeds removed
- 1 lb Tropical Traditions Grass Fed Ground Beef
- 1 (14oz) can tomato sauce
- 3 egg whites, whisked
- 1 tablespoon dried parsley
- 1 tablespoon dried basil
- 1 tablespoon dried thyme
- salt and pepper, to taste
- 1 tablespoon fat of choice (I used bacon fat)
Asian Chicken Soup (Paleo)

In a large saucepan or dutch oven, add in chicken and about 4-6 cups of water
- 1 leftover chicken or turkey carcass, or 4 boneless, skinless thighs
- 4 cups water
- 4-6 garlic cloves, chopped
- 1 Tbsp fresh ginger, minced or grated
- 1 cup chopped organic kale, 1 carton of oranic chicken stock
- 3 or 4 carrots, sliced , 4-6 chopped green onions
- 1 medium sized baby bok choy, chopped,
- 1/2 lb fresh shiitake mushrooms, sliced
- 2 Tbsp soy sauce, 1/2 tsp red pepper flakes, fish sauce to taste
Breakfast Stuffed Acorn Squash (Paleo)

- 3/4 lb US Wellness Meats Natural Breakfast Sausage
- 1 acorn squash, cut in half, seeds removed
- 2 eggs
- 1/2 yellow onion, diced
- 1 garlic clove, minced
- salt and pepper, to taste
Cumin-Roasted Carrots

1. Preheat the oven to 400 F
- 1 pound fresh carrots (about 10)
- 1/2 tablespoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 1/2 tablespoons coconut oil
- 1/2 fresh lemon (optional)
- a few leaves of fresh parsley and mint, minced, for garnish (optional)
Caramelized Onion & Sausage Stuffing

- 1 lb ground pork sausage
- 2 yellow onions, sliced
- 1 sweet potato or yam
- 1 container of mushrooms, roughly chopped
- 2 tablespoons white wine vinegar
- 1 cup pecans, chopped
- 2 eggs, beaten
- 1/3 cup chicken broth
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons fat of choice
- 1 garlic clove, minced
- salt and pepper, to taste
