Eggnog (Paleo)

Mix egg yolks, 2 cups of coconut/almond milk or cream, and sugar
- 4 beaten egg yolks
- 3 cups coconut milk, almond milk, or whole cream
- 1 teaspoon maple syrup or sugar
- 1 teaspoon vanilla extract
- ground nutmeg and cinnamon to taste
Caramelized Coconut Chips (Paleo)

1. Mix the sea salt and cinnamon in a small bowl and set aside
- 1 cup unsweetened coconut chips
- 1/4 teaspoon sea salt

Roasted Cabbage Slices

Preheat the oven to 400 degrees
- 1 head of cabbage
- 3 tablespoons (or more) of oil-coconut oil, tallow, etc
- Salt and Pepper to taste (I used about a tablespoon of each)
- Optional: 1 teaspoon of favorite herbs like basil, caraway seeds, dill, etc.
Peppermint Hot Chocolate

Blueberry Butter

Puree the thawed blueberries in a food processor or bender
- 2 1/2 cups blueberries, frozen and thawed (for fresh blueberries, see notes below)
- 1 tablespoon water
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons arrowroot powder

- 1 cup almond flour
- 1 cup sunflower seed butter
- 1 tbsp honey
- 2 tsp vanilla
- 2 tsp coconut oil, melted
- 1 cup Enjoy Life chocolate chips
Cinnamon Sugar Pumpkin Muffins

Preheat your oven to 350ºF and line a standard size muffin tin with liners
- 1/2 cup coconut flour (Let’s Do Organic)
- 1/2 cup tapioca flour (Ener-g)
- 1/2 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 1 1/2 t ground cinnamon
- 1/2 t freshly grated nutmeg
- 1/2 t ground cloves
- 1/2 c melted butter (or coconut oil or palm shortening)
- 2/3 c sugar (I used plain old white sugar, ha)
- 3 eggs
- 1 c pumpkin puree (not quite a 15 ounce can)
- 1 t vanilla extract
- extra cinnamon and sugar for sprinkling on top

- 2 tbl lemon juice
- 1 1/2 tbl extra virgin olive oil
- 1 tsp dried ground garlic
- 1 tsp ground ginger
- 1 tsp ground turmeric
- 1/4 tsp fine sea salt
Avocado Chocolate Mousse (Paleo)

Throw the avocado flesh into a blender or food processor, and blend until creamy smooth
- 2-4 avocados
- 1 c cocoa powder
- 1 c agave syrup (you can use another sweetener, if you choose)
- A pinch of salt
- A dash of vanilla
- A bunch of berries

- 2/3 cup zucchini
- 2/3 cup broccoli florets
- 1 green onion
- 2 tbsp of fresh basil, chopped
- 1 tbsp oregano
- 1/2 tsp ground mustard
- 1/4 tsp baking powder
