Herbed Beets and Onion Gratin

Roast beets at 375 with olive oil, wrapped in foil for 1-1
- 6 roasted beets
- 1 large onion sliced
- 3 tsp olive oil
- chopped clove garlic
- 1 cup chopped mushrooms
- 1/2 cup chopped walnuts
- 6 tbsp red wine or red wine vinegar
- 1 tsp dried tarragon
- 1 tsp chopped parsley
Moroccan Chicken and Butternut Squash Soup

Saute vegetables (excluding butternut squash) until soft Add cooked chicken Add desired amount of broth Season soup
- 1 cup chopped onion
- 1 chopped green pepper
- 1 chopped zucchini
- 3-4 medium carrots
- Chicken (meat from 1 fryer)
- 3 cups (1/2-inch) cubed peeled butternut squash
- 1 teaspoon ground cumin
- 1/4 teaspoon ground cinnamon
- 1/8 to 1/4 teaspoon ground red pepper
- Salt, pepper, oregano, basil, garlic, tumeric
- 2 cans diced tomatoes (fire-roasted)
- Bone broth
- Kale
Cinnamon Lime Middle Eastern Chicken

In medium bowl, mix all cinnamon lime sauce ingredients together
- Middle Eastern Chicken:
- 2 lbs chicken thighs, skinned.
- 2 cups chicken broth (home-made or organic GF)
- 2 tbsp coconut oil.
- 1 small onion, chopped *optional.
- 5 cloves garlic, minced.
- 2 tbsp fresh lime juice.
- 2 medium carrots, sliced.
- 2 ribs celery, sliced
- 1 (14 ounce) can artichoke hearts, drained.
- 1/4 cup raisins, golden are best * optional, omit for an even lower carb count.
- Cinnamon Lime Sauce:
- 2 tbsp fresh lime juice.
- 1 tsp coriander.
- 1 tsp sea salt.
- 1/2 tsp ground cinnamon.
- 1/2 tsp ginger.
- 1/2 tsp turmeric.
- 1/2 tsp pepper.
- 1/4 tsp nutmeg.

scrub beets thoroughly use a mandoline to evenly slice the beets put them in a bowl and coat with coconut or oliv
- yellow golden beets – unpeeled (can use other varieties as well) – quantity varies depending on size of batch you wish to make
- coconut or olive oil
- coarse sea salt and ground pepper
- assorted spices and herbs, as desired

- 2 cups almond flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup coconut oil/butter
- 1/2 cup honey
- 1 tablespoon vanilla extract
- 1 tablespoon coconut cream
- 12 squares quality dark chocolate
Pumpkin Seed Power Truffles (Paleo)

Make the truffle filling: place the pumpkin seeds in a small pan over medium heat
- For the truffle filling:
- 1/2 cup raw pumpkin seeds
- 1 tablespoon unsweetened cocoa powder
- 1 tablespoon ground flaxseed

-Prepare the crust by placing the pecans in a food processor and grind them into fine meal
- For the crust:
- 2 cup raw pecans
- 2 Tbs. coconut oil
- 1 Tbs. of almond butter
- 1/4 cup unsweetened cocoa powder
- 1/4 cup pure maple syrup
- 1/8 tsp. pink himalayan salt
- For the filling:
- 2 cups raw cashews (soaked at least for 4 hours, overnight is better)
- 1/2 cup coconut oil, melted
- 1/4 cup pure maple syrup grade B
- 4 Tbs. coconut water
- 1 Tbs. vanilla extract
- 1 cup zucchini (peeled & diced)
- 1/2 cup almond butter
- 1/4 cup of Coconut Crystals (If you don’t have coconut crystals just use another 1/4 cup of maple syrup for a total of 1/2 cup)
- 1/4 tsp. pink himalayan salt
- The juice of one medium lemon
- For the toppings:
- Chocolate Sauce
- 1/2 cup of coconut oil, melted
- 4 Tbs. unsweetened cocoa powder
- 2 Tbs. maple syrup
- 1 tsp. vanilla extract
